    When you pulled out the broccoli I thought of cheesy broccoli rice casserole with chicken; now I need to see if I have those ingredients. Something I like to do when there’s not enough for an entire meal is baked potatoes and everyone can choose their own toppings - queso, pulled pork, salsa, broccoli & cheese …

      This video is Perfect timing for me, some great ideas, I was going to go shopping today but I was looking at my fridge and pantry thinking how cluttered it all looked (don’t get me wrong I am very thankful to have so much food in my fridge and pantry). I decided I’m not going shopping this week until I have used up what I already have, not everyone will be happy with what is served but it’s only for a week or so.

      I wish brands would be consistent. I have elbow macaroni...it can range between 5-8 minutes to cook it aldente. That's a big difference between brands!

    I want you to know that this inspired me to do the same this week. Went through my fridge and took berries that was about to be bad and made cobbler. I had some soup left over that I was tired of, so I froze that. Also made a meal plan for stuff left that I could use up.

    Loved the idea of tortillas with peanut butter and jam! I always have leftover tortillas when we do tacos and I’m always at a loss of what to do with the 3 or 4 that are left over. I just did my meal planning for the week and tried the online grocery pick up from Walmart for the first time. What a game changer! No impulse buys, stayed within budget and didn’t have to load my car with the groceries! Lol love seeing this type of video. It always makes me feel motivated to use what I have on hand before buying or opening more things.

      I have a cookbook from 1996 called Kids in the Kitchen that contains the tortillas with peanut butter and jam recipe. Sadly that cookbook is no longer available.

      We love making Tortilla pizzas with leftover tortillas or cheese quesadillas

      @kathryn You can use tortillas for roll ups with a lil cream cheese and jam and another sweet treat is to cut them into quarters or strips and fry them and shake cinnamon and sugar over them

    Watched this video and went and did an inventory of my freezers...wow, the stuff I didn't know I have that was buried at the bottom!! I have made a meal plan for this week and will work on next week as well. Plenty of stuff to use up for sure! Thanks for the tips and suggestions! My next task is inventory of the pantry -- not looking forward to that. It is a hot mess!!

    I planned to do the same thing this week!! Will save so much money. My daughter is 26 now and no longer lives with me, but when she did would always leave empty boxes in the pantry. I hated that because I would think I had something to find out I didn’t. 😂 As frustrated as I was I cherish the memories!

    I LOVE your use it up videos ! You are so creative and I love how you do not waste food ! I used to be VERY food insecure when I was raising my kids, so I really appreciate the fact that you do not waste ! I was one of those moms that did not eat until my kids were finished, then I ate their leftovers. Thankfully those days are long gone. I also have a partially used jar of pesto and I never thought about using it as a marinade. I will definitely give that a try ! Thank you for being so inspiring Mindy !

    I'm sure other people do this but when I have stuff like that laying around and can't come up with something I google an answer. I say for instance, what can I do with sausage, rice and pineapple, up comes recipes, it's my brain power I use for lacking that power. Lol. I too need to go through the pantry and look at Stuff already opened.

    P.S. Years and even decades ago some frugal families would only grocery shop once a month. Might seem counter-intuitive but bet doing that cuts down on food waste.

      I see people on youtube doing once a month shopping 🙂 I've tried it out a few times it makes the month go by so smoothly but it does take a bit more planning up front 😅

    Your Mother's Day gift! 🤣🤣🤣 My girls told me they buy me nail polish for my birthday in colors they like so they can use them. 🤣 At least they're honest! A friend of mine use to make a snack mix with all the bits of chips, crackers and pretzels. She also put chips on her sandwiches. Good way to use up chips!

    I've been trying to do this more. I grilled the other night and threw 4 yellow peppers I had on it because they were old. We had so much food we didn't eat them but I made stuffed peppers last night with them. So good! ❤️

    I love your ideas to cook food. This morning I made a breakfast dish. I saw a TH-cam video. I took sausage cheese hash browns biscuits eggs. I use my next door neighbor eggs they have chickens. My brother was surprised I made him breakfast.

    So funny. I was just looking to cooking something. I have enough food cooked already in the refrigetor that needs to be eating as left overs. So, I'm having some bagels and peanut butter for breakfast to eat up these bagels instead of making a egg scramble.

    We have been doing pantry cooking for about a month now. Without meaning too. I haven't felt like doing a lot of shopping so my son had come up with some meals with things we have here. It has been fun.

    When I saw you with a jar of peanut butter on your counter, I had to share the news I saw last night about the Jif Peanut Butter recall. I couldn't tell what brand yours is. but wanted to pass this along before you or anybody else used theirs and got sick from it. We've got three jars that are on the list. Have been eating from one of those jars this week - great, huh? Hopefully nobody will get sick from it.

    Plan out your meals, before you go shopping, write out what you need for each meal. Then check your freezer, fridge and pantry, BEFORE making your shopping list and going shopping.

    I went to see a friend at work and she said the day before they had thrown out 60 gallons of milk that didn't expire for three more days! We have a local food bank and I wish they would have donated that before throwing it in the dumpster.

      Hi. I would suggest contacting the food bank to see if they can collect. Then mentioning it to your friend and posting a message on a platform for others to follow. If they can't collect then maybe you or someone you know would but for various people and do one collection trip per week or month. That might help...good luck. Tc

      I had so much milk from WIC and couldn't use it up...I asked the principal if I could bring it in and she said yes....I also brought cereal, dry lentils,pinto and other bags of dry beans and other canned goods...days later I received a thank you card signed by the teachers and staff

    I got a great deal on a ham after Easter. I made it for a nice Sunday dinner. With the leftovers I got so many freezer meals out of it using pantry items. We are eating one of them tonight. I did a pantry/freezer challenge in February and it saved so much money. I will do another one in June.

      Many open bags of rice , I usually combine my white rice into one container and use that. If they don't all cook to the same texture it gives the rice a nutty texture.

    I've worked at Casey's in the sub area/pizza kitchen for 4yrs. Thanks for the mention. Not just because I work there(I've worked at places and said they suck) but Casey's is my favorite pizza. I love the smell of the fresh dough when we make it and the feeling of the shredded mozzarella.

    We all need to be stocking up on more food. Many shortages.

    Plus you will beat inflation.

      Buying now to pay less is just kicking the can down the road. I’m not a proponent of that. We all have to figure out how to shop/cook differently, or increase our budgets.

I should know because I only shop once, maybe twice a month and I tend to buy too much for just me and I do have to throw away some things which bites for many reasons and always makes me wish I had the money back I spent on it.

    there's a delicious chinese dish you can make with the broccoli, with using jalapenos, the chicken, soy sauce, ginger, honey, and that can all be made in a skillet along with also putting some potatoes and red peppers in there.

    I am so much happier with my new fridge with the freezer on bottom and double doors on top. It makes it so much easier to see and reach things, even if they get pushed to the back! Food for thought--you might not have room.

    A lot of being able to put together meals from various items you have on hand comes from experience. I have, however, used a couple of different apps to find meals that use one or two ingredients I have on hand.

    I suspect that you spend a lot less per month at the grocery store for your family of 5, than I do for my family of 3 (all girls, even, lol). I need to take a page out of SMM's book, and pantry/shelf cook a LOT more. I don't know why grocery shopping is so appealing to me, esp considering how irritating the ridiculous prices are right now.     I’m learning! I was never great at regular cooking - I can plan and execute a multi-course meal with fine china but just basic stuff escaped me. I love pantry cooking!!! So much fun. Such great flavors. Just cooking beans with veggies and interesting seasoning - yum!

    I took your advice/money saving tip and downloaded the upside app. Unfortunately it told me "upside is not in your area. We won't be able to show you nearby offers or get you cash back". I'm in Sacramento, CA. But on the upside 🙃🙂 your video inspired me to get creative with the leftovers and open containers in my fridge. Thanks 😊

    I absolutely use left overs to make lunches during the week. And I also plan meals around what is open and about to go bad if it's not used up. It's a great way to save money. Great video.

    This was so interesting! My husband and I are 78. In the past I would make a soup (for instance) and we would eat until it was gone. My husbands tastes have changed and we find ourselves wasting so much food because we put the leftovers in the fridge and don’t feel like eating it. I know you have a family but can you give me any ideas on how to cook for two people? We are simple eaters, in fact I have never heard of of the. Cheeses etc you speak of. Anyway I can’t freeze the extra because we have no room in the freezer. We are very frugal and have wasted so much food this year. Food that is useful and costs money! I hate it. I have really never learned to cook small amounts just family size. Any help from you or your subscribers would be so helpful!

      Gloria as our children have grown and left home (we still have 2 of 4 at home) I've starting buying or borrowing from the library books on cooking for one or two people to help scale down recipes. There are also websites devoted to cooking small batch recipes.

      I cook for just myself and sometimes my boyfriend so I understand! I try my best to make multiple recipes with the same ingredients, for instance if I want to make ground beef tacos one night I’ll use 1/2 a pound for that and the other 1/2 pound to make spaghetti sauce for later in the week! Also consider that sometimes it makes more sense to pay a little more per ounce for a prepackaged single serving of something instead of purchasing in bulk. For example a box of macaroni and cheese instead of buying all the ingredients seperately to make it from scratch since they would go bad before you at through it all

    I love re-purposing all those items to clean out the fridge. No Waste. YAY! I found leftover cornbread pushed to the back and leftover rotisserie chicken. Chicken and dressing dinner night. YEP. Made a little chicken gravy from a pack. Dinner was served.
