how to SPONGE Candy or HONEYCOMB Candy

- Sponge Candy, also known as Honeycomb Candy is a lot of fun to make. We are coming up on candy season again and I have been wanting to make and share this recipe with everyone for quit a while. Let me be the first to wish everyone a very Happy Holiday for 1019.
Ingredients for Sponge Candy:
2-1/2 cup sugar
1/3 cup water
2/3 cup corn syrup
later add:
2 tsp. vanilla
2 tsp baking soda
yours is the most beautiful of all the honeycombs i've seen in my research!
I added 2 tablespoons of Honey to mine...Yum that little hint of the honey 🍯 is perfect, thank you for your video 👍👍👍

I normally add honey to mine and omit the corn syrup.
Plus, I put mine on a parchment covered cookie sheet so it isn’t so thick.

Your theory about the brushing of the rim with water is dubious. You brush the rim with water to wash off sugar particles that stick to the sides of that pan, burn, and fall into your caramel and make it bitter.
This is extremely easy do it all the time..good job

Hello Margie, I’m about to into the kitchen and try your recipe as it looks yummy, I’ve tried other recipes they turn out like really sticky toffee I have to bin them. In Scotland it’s called Puff Candy I’ll let you know how it turned out. Thank you 🤗🏴

I've tried about 8 different recipes and the only one that didn't come out right was one that had me take it off the stovetop at 240°. All the others say to take it off the flames at 300° and a cpl said 320° if this recipe doesn't work try making a smaller batch with 1 cup sugar, 4 tbs corn syrup, 1 tbsp honey, 1 tbsp white vinegar. Mix on med heat, turn to med-high til rolling bubbles 300°take off heat. Add 1 tbsp vanilla extract. Add 1 tbsp baking soda and mix quickly. Pour on parchment paper or greased pan/plate. Good luck 🤞

Hi, I wonder if you tried adding the vanilla to the pot when you add the sugars, this should safe you from the splatter as it fizzles. This may also help reduce the temperature dropping too much for when you add the baking soda.

Every different variations of this recipe that calls for vanilla extract says to throw it on at the end. Id imagine it cooks out at such a high heat🤷♂️and that's why they don't say to add it in the beginning. Idk that's why I leave stuff like this to the professionals.
Margie, this really does work well! The water brush was a key and amount of time at temp, too.
I am going to higher altitudes soon and I hope I can find a way to adjust so I get the same honeycomb effect. It takes longer to reach boiling temperatures there.
It goes by sea level. Decrease 2 degrees for every 1000 feet. If the recipe says to cook to 380 F. and you are at 1000 feet you would decrease the temp 2 degrees. When the temp reaches 378 degrees the recipe is done and if you are at 5,000 feet (Denver). 5x2=10 Cook the recipe to 370 F. I hope that helps. I hope the sponge candy comes out for you. Be sure your thermometer is right. test in water. Water boils at 212 at sea level. I works the same way. subtract 2 degrees for every 1000 feet. What elevation are you going to? Margie

Yes, some recipes I've seen do not require corn syrup, they just use regular sugar. You probably can use maple syrup in lieu of corn syrup, just add some more sugar to the recipe...like 1/4 - 1/2 cup. Good luck.

Honey Comb Candy does not contain honey. It is called Honey Comb because of the texture.
Some recipes also add 1 1/2 T. honey, but most do not -- I prefer this recipe with no honey/tastes better to me. By the way, you're a jerk the rude way you worded your comment -- put your manners back in!
