This way, the heat of the pan alone would cook the mini pancakes slowly and it won't burn. It would also give you time to flip them on your own pace. Because of the small size, it won't take that much heat to cook them.

In The Netherlands we have "poffertjes" which is basically baby pancakes, but we also have a special skillet whit mini pancase shapes in them which makes them easier to flip.
poffertjes are soo good!! there are some left over in Indonesia from the ducth occupation except orthography has been modified to puffercheese or pufferchez to make it easier to read
If I had to be bothered with making "pancake cereal" I'd just make a few large ones & cut them with a bottle cap/small fun shaped cookie cutters too maybe, if I had any.

As a very burny and slouchy food maker (can't be called cooking what I do to ingredients), Panna cotta indeed is easy. Haven't tried caramel thiogh. Neither have torch, nor patience for it. Panna cotta is a very good low carb ice-cream/pudding alternative with a good amount of protein to boot. Cheaper than red meat. I make it for my diabetic mom and dad.

For the coffee, reverse the order: put the foam, then the ice, then the milk. Most of the foam remains, but the coffee gets into the milk without stirring it.
This is what I do, too. But I just use one of those little battery powered milk frother wands to whip the coffee foam right in the bottom of the glass. So much less messy.

For the one in 6:45 we have a thing like that in morocco we call it "briwat" it's somewhat of a sweet/savory puff pastry I think that was their inspiration
Those burger pockets look like it qould freeze well. So you do a big recipe of them and i think you could freeze them before the frying part. So next movie/sports night you finish cooking them and they would make a good appetiser imo.
I find that mini-pancake idea really intriguing for three reasons: 1. If your favorite part of a pancake is that lovely golden-brown soft crust, then you maximize your fave part of the dish! 2. Each of those little pancakes can be perfectly coated in the toppings of your choice, rather than trying to spread them evenly over a large pancake! 3. The convenience of already having perfectly bite-sized little cakes you can scoop up without having to cut anything with a knife and fork! I've never found Tiktok all that appealing personally, but this is some awesome food for thought (sorry about the pun). Also, I've been making whipped coffee for a few years now, and it's definitely worth the hype!
for the Dolgona, if you go further in the whipping stage, you get SUPER thick peaks (since there is no cream it doesnt curdle!!!), and you can absolutely stir it in with the milk without sacrificing the fluffiness.... its amazing! I make mine all the time (and have added vanilla to the milk, use soy or almond milk, and use lakanto monkfruit sugar for a guilt free pick me up!)
So I tried the tortilla "triangles" with cheddar and chorizo inside, fried off in olive oil in a pan (instead of a fryer); it worked well. Excellent way to do any kind of 'pocket food', I would say (not much more trouble than a quesadilla - just the brushing of some flour paste), only takes a minute on each side to fry up.

The refined mini-pancake dish is a fantastic idea for a dessert. A little less time with the blowtorch to ensure the right texture of the pannacotta, and it could very well be served in a nice restaurant. It's creative, but simple, and has hints of nostalgia. Well done, James.
For dalgona coffee, I also thought, “Why go all the way to make it into whipped consistency to just mix it all with the milk? Isn’t that just iced coffee milk?” So I tried making it with the same ingredients but only stirring the coffee, sugar, and water until it all mixed, without whipping it. Weirdly, it tastes different and I like it more when it’s actually whipped. I don’t understand why though.
The dalgona you stir it because it becomes more like a latte (i make basically daily using my blender, and stevia instead of sugar) since i cant go to cafes to get my soy latte this was an amazing way to get the texture of coffee i love 💕

If you want fluffy mini pancakes you should look into dutch 'Poffertjes' we even have special pans to make them.

For dalgona coffee, I also thought, “Why go all the way to make it into whipped consistency to just mix it all with the milk? Isn’t that just iced coffee milk?” So I tried making it with the same ingredients but only stirring the coffee, sugar, and water until it all mixed, without whipping it. Weirdly, it tastes different and I like it more when it’s actually whipped. I don’t understand why though.

The dalgona you stir it because it becomes more like a latte (i make basically daily using my blender, and stevia instead of sugar) since i cant go to cafes to get my soy latte this was an amazing way to get the texture of coffee i love 💕
