In Haiti they don’t peel the brown part off either, the soft brown layer covering the flesh is the most nutritious and healthy part of the coconut. Lots f B vitamins, vitamin E, and more besides minerals and anti oxidant and enzymes. It’s the aleurone layer of the coconut yum 😋
I was going to say the same thing and wondered why it wasn’t done. It adds to the fatty content of the milk making it more creamy, especially for adding to food sauces and drinks

No one peels off the brown i love chewing raw coconut amd the brown makes it so crunchy and yummy
