Whole Grain Bread in a Bread Machine

  • Demonstration on how to make whole-grain bread in a bread machine.
    Recipe:
    1 1/4 c water
    1 T oil
    2 1/2 c whole wheat flour (start with about 1 3/4 c)
    3 T gluten flour (or use half whole wheat flour and half unbleached white)
    1 1/2 tsp salt
    1 1/2 to 3 T sugar (sugar makes the loaf brown as well as feed the yeast)
    1/2 c rolled oats (or other rolled grain)
    2 tsp instant yeast (or 1 1/4 tsp active yeast)
    Extra flour if needed until the dough forms a soft ball.
    Follow the instructions as shown in the video.

    I have the same zojirushi machine as you and our personalized, 40 yr old family recipe is practically the same as yours too! I was unable to make this recipe work in the machine until seeing this video. (Less water and the order of ingredient placement made all the difference) Thank you so much! I also bought a chefmate bread machine and was ready to toss it before implementing your technique. Now I make loaves in both the zojirushi and chefmate (we have a large family). We appreciate you and the time you took to make and share this video!!

    I found that the silicone top of a reusable straw fit perfectly over the stems in the pan. I cut two sections just high enough to slip over the stems after i remove my paddles befor last rise. I oil them just a little. This keeps my bread from attaching itself to the notch at the top of the stems. Thank you for your many helpful details. I make an adapted version of Diedre's low carb bread for my hubby w T2 diabetes. Learning about Einkorn flour now. 🤦🏼‍♀️😊

    Just came back here to THANKYOU with all my heart!!
    Can't explain how amazing the bread has come out, I had heard about adding vital wheat gluten but never got a proper recipe that works.
    I have tried half all purpose-half whole wheat recipe, whole wheat with milk recipe. Everything came out hard and bulky, nothing like store bought bread.
    This recipe made it so the first time that my whole family loved the taste of the homemade bread better than store bought.

    Would this recipe work with einkorn flour, which I use due to gastrointestinal issues? Do you know if there are any adjustments needed as einkorn is a "softer" wholewheat flour? Would I still need to add the gluten flour? (Also, fascinated with your two-tone measuring spoons! Do you recall which brand they are?) New subbie....thanks for sharing.

    Thank you! I needed this video! Do you know the exact times for each cycle on the quick wheat setting? (how long does it knead, rise, knead rise, bake). I would like to copy this quick wheat cycle on the homemade cycle so I can shorten the baking time.

    I always sift flour with the salt, gluten. For sugars can use white, brown or honey. Can use any flour, but I use unbleached flours. Sometimes even use oat, rice, buckwheat flours for part of total flours for added taste and nutrition. Have even used oat, rice, whole wheat sour dough starters. Made with equal parts flours and water that has been able to sit and sour for 72 hours.

    Can I use swerve or monk fruit or allulose sweetener? So you used 3+ cups whole wheat flour?

      I don't believe it would work. Maple syrup or honey could also be used and could be reduced to about 1 T if necessary.

    You needed to explain that not every bread machine has the warming cycle so if your machine doesn’t have it you need
    to use warm water. Any chilled ingredients need to be at least room temperature.

    I was so excited to use my $5 Toastmaster machine from Goodwill. It's like a brick this morning. I wonder if the setting should be different than "wheat" or my yeast didn't work. I guess I'll save this for breadcrumbs & try varying the variables.

      You can find them at Walmart and some say thrift stores. If finding a used one please be sure to check the paddle and make sure it the right one for the machine.
      You definitely don’t need to get two paddles.I have a very expensive machine a gift from daughter and it only has one paddle. It work so well but I’ve also had a
      Inexpensive now that worked very well until it decided to retire. Amazon, Walmart. QVC. Good luck.

      Mr Google knows. Bread making is not an exact science because of humidity, flour compaction etc. After making a few loaves you get the feel for the dough and how much more flour you need to add etc.

    Right off the bat,i never thought of removing the paddles before baking!! When exactly do you remove them?

      I listen for the last knockdown just before the final rise. It usually is just a quick couple of turns of the paddles then I quickly pull it out shape the loaf pull the paddles out and put the loaf back in.

    I want to take the paddle out before it bakes. The total time is 3 hours. I don’t know when I should take paddle out because I’m not sure when the last kneading is and when baking starts. I don’t have an instruction book.

      The last quick movements if the paddles before the final rise will likely be sometime after the first hour. I would call the company or just stay in the room and listen. You should hear the paddles turn just a couple of times. It is not kneading at this point but simply knocking it down after the first rise.

    I own the same model. I use it a lot for dough. Have you found that the machine gets very warm upon the kneading cycle? Thank you for your video. Got a lot of tips and info that will help improve my bread game.

      I have not noticed that. I will try to pay attention next time I make bread. The machine is working hard so it's possible. I hope all is well. It will be a couple of weeks until I make bread again.

      I Made bread today and tried to pay attention of the heating up of the machine during the meeting cycle. The machine got slightly warm on the panel side where the vents are but it was still touchable. The rest of the machine did not get hot.

    Hi Thanks for sharing this, the tips about the sugar r good tho I like to work with a lean dough, so generally do not stick too much sweetners or oil. I have a few questions since I am new to bread makers:
    1. when your loaves come out, does the top Crispy up at the same level as the sides?
    2. have u ever stuck a bit of tin foil over the bake dish inside ur bread maker while proofing?
    I did and got a way better result, more rise and a flufier loaf as a result, I removed it for the bake cycle
    3. do you have any tips on how to get a more open crumb using a bread maker?
    I have increased the amount of water from 60% to 80% thats helped somewhat but still not what I am looking for, Nice open crumb is what I would like.

      I'm sorry for the delay in answering. By now you probably have this all figured out and I would love for you to share what you're accomplishing! I have not tried foil. Sometimes it takes a little adapting to get the recipe just right for your machine and for your environment. Keep up the good work! Blessings!

      I packed it up and went back to a 20 min bake time and better results...
      Quick side note: I recently discovered the carnivore diet, so I started on this...
      I gotta tell u, when I been wanting to lose some KG... and I got results within 4 days...
      And Butter is part of it as is juicy pork crackling... Have I got u curious?

      @@redknight3439 Interesting. I am familiar with the Paleo and keto diets. It is important to remember that good health is more than loosing weight. You might want to have your blood lipids checked in a month or so. These diets have the benefits of no sugar an no refined carbohydrates, but are also high in saturated fat and cholesterol. Check the science. Kaiser Permanente (a large risk management company) did the homework and then sent a letter to some 15,000 of their physicians/care givers to encourage their clients to go more plant-based. They pay the medical bills for their subscribers and have a vested interest in their health. All the best to you! You sound like an open-minded searcher for good things!

      @@LeslieCaza Well considering the BULK of the so called res Co's r bought... I usually dont pay no never mind to any of that.
      far as going for a more plant based thing... ya gave being a vegun a shot...
      lasted a week, most disgusting trash I ever put in my mouth... Never again.
      I go by what my body tells me, and when things that have been a constant in my life start to clear up, I sit up and pay attention.
      Mind you this started on the carnivore diet after 4 days on it Only.
      Honestly there is Great reason to bag this lifestyle change... the local MOB by the name of big pharma starts Losing HUGE profits cuz the change in eating habits clears up sooo much the mind boggles...
      here r some of the intell I came across from other utube vids:
      no mo constapation
      skin issues clear up and dont come back
      back pain goes away
      Decent weight loss each week without starvation
      no more zits
      improved health hair growth
      Greatly improved energy levels...
      for me thats more then enuf to get on this and stay there.
      There are a Great lengthy list of how beneficial this type of life is.
      The research I am doing is how my body feels and so far this is something I am looking forward to each day.

      I have to greatly reduce any sweeteners in my bread or the crust gets too dark. Just 1 tablespoon.

      @@LeslieCaza Yeah, I found this old zojirushi at good will for $8. I eventually got another zojirushi, the older model of the virtuoso, used. But I didn’t want to get rid of my old white zorirushi, I wonder if it could get fixed somehow.

    Why do i get side wall crack on the bread?

      It might be the way you remove the bread from the pan. Slide a thin spatula along the pan all the way around before removing, then be careful not to bang the top of the loaf when flipping the pan upside down to remove the loaf. The other reason may be that the dough is too dry. It is an art to make good bread, even in a machine. If you keep working at it, you will likely develop great skill. God bless as you grow!

      I have a Zojirushi. We were fortunate enough to have one given to us and then my husband found one at a thrift store for $5. They're rather pricey. Other brands probably work very well just shop around and read the reviews. I hope you find a good one!

    You must explain the these instructions are for the machine you have. Not all machines do as you said such as not needing warm water
    Which most do and most do not do a warmup as does the zo and not all machines have two paddles.

    Hi there, dunno want to minimise the effort to perfecting this receipe and adding all these steps and corrections. But does it not defeat the purpose of having a bread machine? wasn't it suppose to be "put it all in, take out the bread at the end" ? Cause if I try to translate the method : knead the dough(standup mixer or even hand mixing), then I identified a single proof rise, then baking. I imagine that everyone has seen hundreds of these recepies (no knead whole bread) that try to take out the need of a rather expensive bread machine that in this case we happen to have and we have to make use of it somehow. But the receipe is basic whole wheat with the basic 3 stages. Given the degree of baby sitting and intervention that is seen in this well intended video, I'd take out the unnecessary gluten flower and make it a half and half whole and white bread, simple mixing with or without a mixer, add two stages of slap and folding paired with two other raise-proof stages and finally put in simple bread trays in the oven that every household has. Anyways, I don't want to throw shade at the video, as I said well intended, but it lacks purpose for a bread machine(simplicity and expediency) and in the end it mimicks so well a receipe that does not need a bread machine that it can be very well be reciprocated without it, with simple breadpans and an oven. Cheers.

      Thank you. Your comment maybe useful to someone. I personally find this a whole lot easier than making it by hand and it doesn't have a lot of added chemicals like store-bought bread. I like that it cooks in the machine so that I don't have to heat up my oven. All that being said thank you for sharing!

    You didn't read the instructions in the recipe book that comes with the Zo bread maker. The salt should not be add where you will add your yeast. Tsk Tsk.

      You can add the salt in the corner of the pan in order to not touch the yeast.

    Very nice, and impressive result! However, all that interaction during the process kinda defeats the point of using a machine IMHO.
