Startups always hire people as fulltime for about a year or two, make you pass probation and settle you in thinking your really in a stable company, but once you have done their work that they wanted you for their project they kick you out. Its a dirty trick and have seen it myself few times. One startup was 5 years old and they still did they same trick.
This is a case where you learn from mistakes in the past. I personally wouldn't classify your decision as a mistake as the Serve Robotics role would have been pretty enticing given the reasons you mentioned. It is funny how the offer they gave you came full circle as to what your future plans are now though (referring to your decision regarding whether to pursue your masters in something like CE).
You can also just ask what their start up funding is during interview. How they answer will tell you what the health of the start up is pretty quickly.

Also is the point about applying to big tech companies through contracting companies also true for coops? (I’m a UW Eng student for some context)
U know advantage of being a Mechanical, Electrical or Computer Engineer Is that u guys actually have lots of companies and diverse opportunities but As a Civil Engineer it's like total handicap jobs are limited and it requires Eternal Experience like 10 to 20 years just to get an average job in Civil Engineering 🤦🏻♂️

Keep in mind, that is a contract offer. Contracts don’t get stock or bonuses. A full time offer would be closer to 130k total compensation
