My mom, we are 100% italian, never made my gram’s ravioli, but she did teach me a short cut on making manicotti. 10 eggs, 1 cup or water, and 1 cup of flour in the blender. I throw in a pinch of salt, then make them like crapes in a little non stick pan. Very easy. Make the filling the way you like, fresh parsley, salt, pepper, grated cheese, and egg goes into the ricotta. Love this family

Respect! When I watch this lovely grandmother kneading the dough I can see how she has maintained the strength and health of her hands, something that often fades away when we get older.
