I do a needless.. kneadless spicy fruit loaf mix as my buns.. 50/50 saltanas & raisins, dried apricot, prunes & figs.. I only ever use soft brown sugar.. 5 spice & cinnamon, milk powder.. all in a warm bowl.. just 1 teaspoon of yeast but.. I leave to rise overnight to bake early morning.. a large square pizza stone.. the prunes & dates make for a real smooth mellow sweetness & I think give the yeast a good kick.. huge rise & very light.. cheers from Palmy.. doing a $50 challenge too 👌

You’re world famous in Aotearoa now, Stacey! Love your channel. We try to do similar things with our food budget because we hate waste. One thing that no cookery blogs cover is the cost of power while cooking. We use Electric Kiwi as our supplier. They give us an hour of free power every day so we endeavour to cook for the day in that hour. Baking, hob cooking, the lot! It’s amazing what you can get done in an hour if you prepare ahead of time and batch bake. Off to try your hot X buns next!

Thank you so much for this recipe! I halved it as we have a tiny oven in an off grid tiny home (to half the egg I just beat it and tipped about half of it in the mix). This recipe is insanely good! The half mix made 8, and they were devoured by the family who proclaimed that they were the “best they’ve ever eaten!” ❤ We have to make up another couple of batches for the weekend 😂

Another way to prove buns is in the fridge. I often make my buns or rolls in the evening, form them, cover them, and stick them in the fridge for up to a couple of days. Usually just overnight, but there is no change if leaving them longer. Bring them up to room temperature using any of your warm the dough methods, and bake as usual. This also has the benefit of a slow rise which makes a particularly tender crumb. Very convenient too for a busy lifestyle. Can freeze at that stage also.

I tried these this afternoon, they turned out fantastic! I had been wanting to try baking hot x buns again, the last recipe I attempted was very complicated and they turned out doughy. These were so fast to make - I decided to make them at 3pm and they were cooling on a rack at 5:30pm! So easy! I did the chocolate, made 15 buns like you did, they are a great size and the texture is light and fluffy like store bought. I don't have a fancy mixer but I did use the dough hooks on my electric mixer and kneaded that way for a few minutes. I will be making more for Easter, thank you!

Thank you Tracey! I made these today and they worked out perfectly. I made 16 in the flat tray the oven came with. So soft and delicious and super easy. Proofing time was longer though. Just over 1 hour first proof and about 50 mins second proof. Otherwise everything else perfect 👌🏼 keep doing what you’re doing. You are soooo endearing 🥰

My young niece and I made these yesterday (Easter Sunday) for the extended family. Easy as, and very yummy! I'm going to add more spices next time just as a personal preference, but the traditional, fruit-free, chocolate and even a batch made with GF flour were very much appreciated by all. (The GF ones weren't as fluffy, as per usual, but still worked quite well.) Thank you for a great recipe!

I made these hot cross buns for today. Best hot cross buns recipe I've found. For my personal taste, I will be increasing the spices next time. I did 12, and they are huge. Im in the Pacific Northwest of the US. For Easter, in cooler parts of the west it seems most people have an indoor meal with ham sweet potatoes and the like. In the warmer southern states its often an outdoor affair. Im not positive what they tend to eat. I believe its more like picnic food. Both are amazing and should be tried at least once in your life❤ thanks for sharing darlin ❤❤

They were great thanks. I read you article on your web site about canning. I've had two All American pressure cookers for 30 years. They've been busy just this past week preserving tomato soup. It’s absolutely fantastic. Just do a little research on rolling and tensioning the buns. If you have made bread to will know. I had made bread for years but this dough was completely new to me. Turns out you shape the same way. Tension over the top and pinched in underneath

I love how you store or your herbs in large jars, i do the same. I go through that much of all my herbs and spices because i make almost everything from scratch. Plus, they are soooo much cheaper.

In Canada , for whatever reason about 6 weeks ago a shop here was selling hot cross buns for a very reasonable price , so I purchased a bag. I ate some, and then they were forgotten and got tucked behind some cans as I was rearranging. So a month later I found them. They weren’t mouldy. They were still soft. So freaked out having no idea what I ate, and there was nothing unusual on the ingredients list. Never again, so I shall now only bake them, so thank you for the recipe! Very timely!

I made these today in preparation for tomorrow. Well.......there were definitely a few eaten today. Everyone loved them! I will never buy them now, this was so easy and they are delicious. I made the chocolate ones and fruit but left the fruit out as no one likes raisins or sultanas in my house. Your video was great and the recipe is so easy to follow.

Good morning Stacey. Well I made 2 batches of hot x buns yesterday, 1 choc & 1 sultana, first time ever. They looked & smelt amazing. However they were not as fluffy as yours looked, a bit dense. Could be too that I bake in a benchtop oven at the moment & instead of 2 batches per bake I squashed them onto one one tray. Yup, the whole 16 buns. My crosses were a bit sloppy too, so maybe I'll add a bit more flour or less water? I toasted a fruit one for morning tea this morning with lashings of butter. Delicious! Keep inspiring us 😊
Thanks for messaging me, it could be a couple of reasons. The dough might have been a little too dense. If too much flour is added that can be one reason. Make sure it is still tacky for the first rise. You can always add more before shaping them. Also, there could be not enough rise time during the first or second rise. I hope that helps. You did amazingly well, like I said practice makes perfect.
Hi Stacey👋🏻👋🏻, I made both these buns and they were AMAZING!! The only problem I had was I think I added too much cocoa in the chocolate buns. Unlike the plain fruit ones, the chocolate ones were not as light/fluffy when cooked. I will be trying a variation next time, apple and cinnamon which is a family favourite! I am sure with your recipe and these new ingredients will ensure no-one in my family will be buying hot cross buns in the future!🥳🌸🥳🌸 Thanks so much for sharing. I just found your channel and loving your no nonsense style of cooking... The way you measure ingredients is so much like me! You seem to eyeball things and work quickly, marks of an experienced cook. BTW you can save a bit of money by using plain sugar and adding 1 heaping tsp per cup of molasses instead of brown sugar. I don't buy brown sugar anymore, it's silly how much they charge and it goes hard and lumpy so fast. Anyway, great channel, I'm glad I found it!

Made the spicey buns yesterday and they turned out amazingly. They had a really nice soft texture and much better than any other buns I have tried. I don't have a mixer and puzzled for a bit how to best add the butter. In the end I just rubbed it into the dry ingredients and that worked well. They were delicous even when they were not heated up. Mine always came out supersized like your chocolate ones. I never tried chocolate and I used very little sultanas. ❤

I just made these today and not only are they really easy to make, but they are so delicious too, thanks so much, I am going to freeze most of them for Easter, but I just had to try one as it was cooling down. I made one batch but halved it and used sultanas in one lot and choc chips in the other lot, both are fantastic, this recipe is a definite Keeper!!

I have made fruit ones before but was a bread machine recipe and quite some time ago, I believe they were good though. I only found your channel about a week or two ago and love the video's, have saved quite a few for future reference 😀 I did try your crumpet recipe last week but as I don't have any rings or empty tuna cans I just made them freeform and they were more like pikelets but still delicious and all got eaten! 🙂 Thank you for your video's and I'd love to live on a homestead or mini farm of sorts but currently live in a city with no garden even and don't know anyone who lives like this at all, nor do I really have a clue where I'd start anyway at 50+ !! Thank you Tracey! I made these today and they worked out perfectly. I made 16 in the flat tray the oven came with. So soft and delicious and super easy. Proofing time was longer though. Just over 1 hour first proof and about 50 mins second proof. Otherwise everything else perfect 👌🏼 keep doing what you’re doing. You are soooo endearing 🥰

My young niece and I made these yesterday (Easter Sunday) for the extended family. Easy as, and very yummy! I'm going to add more spices next time just as a personal preference, but the traditional, fruit-free, chocolate and even a batch made with GF flour were very much appreciated by all. (The GF ones weren't as fluffy, as per usual, but still worked quite well.) Thank you for a great recipe!

I made these hot cross buns for today. Best hot cross buns recipe I've found. For my personal taste, I will be increasing the spices next time. I did 12, and they are huge.
I'll be turning 2 of them into chocolate hot cross bread and butter pudding for desert on Sunday.

Im in the Pacific Northwest of the US. For Easter, in cooler parts of the west it seems most people have an indoor meal with ham sweet potatoes and the like. In the warmer southern states its often an outdoor affair. Im not positive what they tend to eat. I believe its more like picnic food. Both are amazing and should be tried at least once in your life❤ thanks for sharing darlin ❤❤

It’s absolutely fantastic. Just do a little research on rolling and tensioning the buns. If you have made bread to will know. I had made bread for years but this dough was completely new to me. Turns out you shape the same way. Tension over the top and pinched in underneath

Re - the bottled plums, um, I found out why my nana and mum only made jam with Maribelle plums, they turned to mush in seconds with the heat. You live and you learn
I love how you store or your herbs in large jars, i do the same. I go through that much of all my herbs and spices because i make almost everything from scratch.
Plus, they are soooo much cheaper.

In Canada , for whatever reason about 6 weeks ago a shop here was selling hot cross buns for a very reasonable price , so I purchased a bag. I ate some, and then they were forgotten and got tucked behind some cans as I was rearranging. So a month later I found them. They weren’t mouldy. They were still soft. So freaked out having no idea what I ate, and there was nothing unusual on the ingredients list. Never again, so I shall now only bake them, so thank you for the recipe! Very timely!

I made these today in preparation for tomorrow. Well.......there were definitely a few eaten today. Everyone loved them! I will never buy them now, this was so easy and they are delicious. I made the chocolate ones and fruit but left the fruit out as no one likes raisins or sultanas in my house. Your video was great and the recipe is so easy to follow.

Good morning Stacey. Well I made 2 batches of hot x buns yesterday, 1 choc & 1 sultana, first time ever. They looked & smelt amazing. However they were not as fluffy as yours looked, a bit dense. Could be too that I bake in a benchtop oven at the moment & instead of 2 batches per bake I squashed them onto one one tray. Yup, the whole 16 buns. My crosses were a bit sloppy too, so maybe I'll add a bit more flour or less water? I toasted a fruit one for morning tea this morning with lashings of butter. Delicious! Keep inspiring us 😊
Thanks for messaging me, it could be a couple of reasons. The dough might have been a little too dense. If too much flour is added that can be one reason. Make sure it is still tacky for the first rise. You can always add more before shaping them. Also, there could be not enough rise time during the first or second rise. I hope that helps. You did amazingly well, like I said practice makes perfect.

I made both these buns and they were AMAZING!!
The only problem I had was I think I added too much cocoa in the chocolate buns. Unlike the plain fruit ones, the chocolate ones were not as light/fluffy when cooked.
I will be trying a variation next time, apple and cinnamon which is a family favourite! I am sure with your recipe and these new ingredients will ensure no-one in my family will be buying hot cross buns in the future!🥳🌸🥳🌸

I just found your channel and loving your no nonsense style of cooking... The way you measure ingredients is so much like me! You seem to eyeball things and work quickly, marks of an experienced cook. BTW you can save a bit of money by using plain sugar and adding 1 heaping tsp per cup of molasses instead of brown sugar. I don't buy brown sugar anymore, it's silly how much they charge and it goes hard and lumpy so fast. Anyway, great channel, I'm glad I found it!

Made the spicey buns yesterday and they turned out amazingly. They had a really nice soft texture and much better than any other buns I have tried. I don't have a mixer and puzzled for a bit how to best add the butter. In the end I just rubbed it into the dry ingredients and that worked well. They were delicous even when they were not heated up. Thanks for the video and the tips along the way.

Hi Stacey, I’m live in AK, this recipe almost the same as Edmond cookbook. I will give this a go, it’s been years, as kids grown I didn’t find the need to bake. You inspired me to make them again. Mine always came out supersized like your chocolate ones. I never tried chocolate and I used very little sultanas. ❤

I just made these today and not only are they really easy to make, but they are so delicious too, thanks so much, I am going to freeze most of them for Easter, but I just had to try one as it was cooling down. I made one batch but halved it and used sultanas in one lot and choc chips in the other lot, both are fantastic, this recipe is a definite Keeper!!
