      I think parsley mayo is literally just parsley blended into mayo. But it is one of my favourite things about Ecuador. I love all the sauces and aji. I really need to get a parsley mayo recipe as I'm home in Canada for Christmas and I brought aji de tomate de árbol but not the parsley mayo!

    Your channel has really helped me rethink of where I want to stay and maybe live in Ecuador. I thought I would like living in Salinas but after watching this video I am rethinking that, not really into crowded area's . I will definitely visit, but this area just got moved down a couple of spots on my "maybe live there list" Thank you for your videos. I always look forward to seeing your videos.

      Oh thanks so much Tim. So I don't think this video was representative of Salinas because it was the Guayaquil independence day weekend and traditionally people from Guayaquil went to Salinas. But it's definitely a city feel. I belong to a lot of the expat groups on Facebook for specific city's and regions and while I think I need to see Salinas on its own, I'm not sure it's the right fit for me either. If you want to be on the coast and in a city Manta expats seem very sensible. I am planning to go there soon, just waiting for Omicron to settle down so I can visit restaurants safely.

      Isn't there more of a Guayaquil crowd in Playas? Could you elaborate a little more on the differences between Playas and Salinas? I do want facilities though am not keen on night noise.@@ayngelina

      @@ayngelina oh absolutely!… you may want to try Guayaquil and explore the Iguana park, the Malecón 2000, La perla, The Aerovía, Las Penas, Calle Panama (Panama street), Ciudad del Sol, Samborondon especially Plaza Lagos, CC Alhambra, CC Las Terrazas, Theater Sánchez Aguilar, Historic Park that’s just a few in Guayaquil and Samborondon area!…. I wish I was there so I could take you around but besides Gquil you also have El Quilotoa, Baños, Baños de Agua Santa, Nido del Ángel, Mirador Ojos del Volcán, Las Manos De Dios, Quito, La mitad del mundo, Cuenca, El cajas, Dos Chorreras, La mano de la Pachamama, Termas de Oyacachi, Manta, Galapagos Island. Ugh I would not finish! You are better off living there! Hahahaha

    Beautiful Salinas, the nicest place So Far in Ecuador, But has many Beaches and Also Manta and Puerto López are Nice too.

    Hi Ayngelina, your videos are excellent!
    I recently noticed you appear to have taken a step to make multiple language options for subtitles available. This is very appreciated!
    Was this difficult? Are you able to share what you did? If it was relatively easy, is this something folks with previous videos can apply retroactively,
    or does it need to be done when initially uploading the video? Thanks for sharing your experience.

      So I transcribe all my videos in English, it's a pain but I don't find TH-cam does a great job of transcribing, especially Spanish words. I upload them as a .txt file as the file instead of TH-cam's default captions.
      From there it's pretty easy. I open up the subtitles tab in studio and it will auto translate the captions into whatever language you want. I do Spanish, Latin American Spanish, French, Portuguese, German and French because I noticed people were using auto captioning in those languages.
      Then for the title and description I just use Google Translate to put add them. Yes you can go back and do it retroactively, other than the initial transcribe TH-cam makes it easy.
      I don't understand why TH-cam doesn't do a better job with transcribing. Facebook almost always gets it nearly perfect.

      @@ayngelina Wow! Thanks for your excellent response! I believe your extra work up front will pay off with more subscribers.
      I enjoy being able to effortlessly toggle subtitle languages. Unlike a P/C, using a Roku, the configuration menu of TH-cam is very limited.
      When I first noticed it with a few of your videos, I thought TH-cam had made a (much needed) change, however upon looking at other channels with roots in Ecuador, I didn't see this option.
      I thank you for dedicating more time on the front end to publish these videos for more multi-lingual situations. I'm fairly computer literate, however don't recall saving anything as a .txt file. Based upon your experience, if I wanted to do something similar, what would you suggest as the simplest effective method?
      Let me add to the question, do you know if this can be done with Google Docs?

      @@henryle1940 I just finished 90 days and applied for an extension of another 90 days. Unfortunately my visa runs out beginning of March so I have to leave for six months unless I apply for a temporary resident visa.

    When we visited Canoa my breakfasts was usually a big plate of rice with three medium cooked eggs on top - my partner went down the road for crepes - mine only costs $2 while his meal was $7 .. I would love to return to Ecuador

    Hi Ayngelina I would love to travel to Salinas and eat like you do- inexpensively and delicious but fear getting sick. I don't trust places unless native area people take me. How do you go about picking out a good inexpensive place when you're on your own?

      Any place that has lots of people is fine. Ecuador has higher standards of hygiene than other countries and I've never felt ill from something I ate. But I also include information about where I went so people can feel confident going to the same places.

    Well, too many restrictions, but I do like a clean beach. The dog mess--I still don't understand that. I am in Cuenca now for 8 days, and I am not yet at the point of 'loving it'. I have yet to eat authentic Ecuadorian food. I have had encobellado (sp), but there only seem to be international foods. Any suggestions?

      Whaaaaa! You are definitely eating at the wrong places then! Cuenca is gastronomically one of the most important areas for food. But there are a lot of gringo places because the expats like them, especially in Gringolandia. Okay let me point you to some of my videos.
      1) First there is a Cuenca video which Andres is my guide, and we visit a couple spots. If you need a guide to show you the traditional food I have his contact info in the description for that video. He's been my guide throughout the videos but I'm in Canada for Christmas so he is free :)
      2) I have a video right afterwards called "Huecas", these are hole in the wall restaurants that serve traditional food at cheap prices.
      3) Go to the market 10 de Agosto! It is absolutely safe to eat there. Encebollado is great but it is a coastal food. The Andes is all about pork, potatoes and mote (hominy). Go to the section with all the women with pigs and get a plate of hornado which will have pork, llapingachos (potato cakes) mote and make sure you get the tree tomato hot sauce (just ask for aji).
      Cuenca definitely has two sides of it. I don't really spend time at expat spots. There are lots of great almuerzo (set lunch) spots around the city and absolutely tons of traditional food spots. You just won't find them right on the squares and they won't be the most beautiful places, but the food is worth it.

      @@ayngelina Thanks, I appreciate the information. I have seen these huecas as I flew by them in a cab. I have to go out and look for them. I am definitely in the non-Gringo section since no one, I mean hardly anyone speaks English or French. So, I humiliate myself using my sad Spanish, and hand gestures.       @@amul7430 oh no! If you need help reach out to Andres. He's an official Ecuadorian tour guide and has lived internationally (Germany, US).
      He's said one of his biggest "tours" is just taking potential expats out to show them where to get things, helps them organize by acting as a translator and gives them an insiders view of the town, including neighbourhoods to live in. His family owns three BnBs in the historic area so that's where I stay.
      Also if you need services in English go to the main square - that is your most likely chance that they'll have people speaking English.

      The farther north you go on the coast the less cloud coverage you’ll get so you may want to check my other coastal videos out.
      I don’t know about Gingko but there are a lot of foreigners and buying things online and having them delivered is common so Cuenca health food shops may deliver for a fee if you can’t find what you need in Salinas

      They are neighbours and have similar weather but Salinas is a bit more upscale. Turkey is expensive in Ecuador but chicken is usually free range and without additives especially if you buy it from local butchers. The post office is non existent although it’s supposedly open again but courier services are common throughout the country.

      It really depends on the region, there are places like Cuenca which are doing well and have over 90% vaccinated whereas Guayaquil has had a rough time as well as the province Quito is in. But none of the regions should be having big parties right now.

    The perennial dog poop problem in Salinas. Even on the Malecon where tourists walk. And at night the packs of dogs go on the beach and poop there as well. I never go into the beach water in Salinas. Better bet is to walk across to Chippipe where is is much cleaner and little to no roaming dogs. Also, most seafood along the Malecon is Salinas is subpar and overpriced. It is better to travel nearby to Anconcito or the seafood cabanas around Ballenita and San Pablo. The seafood there is more fresh, larger portions, and less money. I love the Corvina fish, and of course the shrimp ceviches.

      My favourite seafood is in Esmeraldas but it's not safe to go there right now. I do have a video on Anconcito too, great food there. I've done a few road trips up the coast and just popped into each town to see what's going on, there are some real gems.

      I can understand that. It wasn't my favourite but it was also a holiday weekend and I was there for 24h. I feel like I need to give it another shot.
