I love your video and I’m a little jealous that you get to visit almost the entire country and enjoy our delicious food! I want to tell you that you are making a great difference in our gastronomy by showing the world that even though Ecuador is a small country it has everything and more that many large and more developed countries have. Great Video, and sorry to hear they were out of crab. Pata de burro = Snail. How does it compare to Conch? You mentioned it was similar to a cooked mushroom. We've never tried or heard of this dish, however it looks tasty, and we would be thrilled to have the opportunity.
I usually don't eat conch as it's not sustainable in many countries. But of those that I've eaten this sea snail is better. Also I did have the crab elsewhere but I didn't have enough for a whole video so it will appear in an upcoming video dedicated to Esmeraldan dishes 😊

I find that in panaderias of Ecuador, desserts looks so chemical with their artificial vibrant colours, but once I taste it it's often natural fruits in there and rarely too sweet in fact!
