    Very impressive fish cutting skills. Humane dispatch of fish and excellent, clean, skillful cutting and filleting. This man is a master of his craft and anyone would be lucky to have him preparing fish for them. I'm impressed that the buyer chose the fish that looked like it was not going to live much longer and had probably been in the tank for quite some time. The fish produced some nice looking flesh, regardless of how it looked in the tank.

      @Mike Smith it removes the blood. Blood tends to make the flesh bitter and it decomposes faster.

    For everyone saying ghis is the reason for corona virus i say if you don't want them eating it then get them some food. I like how the horrendous diet of less well of people only becomes a problem when it affects us and we somehow blame it on then; like what are they supposed to do not eat? The way this guy is handling the fish is fine, but you guys wouldn't know that because the most experience you have with preparing food is microwaving your half eaten McDonalds cheeseburger.

    대체 비위생적이라하는건 어딜보고 하는 말인거지
    손질하는 도마와 써는도마를 분리해서 사용하는데다 손질하는 도마도 계속 씻고
    목장갑도 손질때만 사용하고
    피빼고 내장제거도 깔끔하고
    수산시장에서 하는것치곤 깔끔한게아니라 그냥 전문점 수준으로 깔끔하게 하는데
    이게 비위생적이라하면 어디 무균실이라도 들어가서 작업하라는건가

    이거 진짜 보기 힘든 활민어네요. 큰민어도 아니고. 부레도 엄청 크고 간도 좋고 얼굴도 자연산민어고. 전 선어만 먹어봐서 활민어 맛은 식감이 쫄깃 하겠죠 선어는 감칠맛이 좋고 암튼 엄청 요즘 비싸겠어요 부럽습니다

    Amazing skills, humanely dispatching the animal, Ikejime and prep top notch, however, the state of that fish was abhorrent. Cloudy eyes, moldy skin, barely any muscle tone, almost dead when it went out of the water. I would never eat this.

      느리게 한다고 빠르게 해달라고 하시는 분들 때분에 위생을 자꾸만 덜 챙기게 되는 부분도 있는 것 같습니다. 그만큼 위생을 위한 루틴을 생략해야 속도가 나오니까요.

    Everyone saying that this was cruel clearly don't know how to humanely dispatch a fish. That first stab was directly to the brain, thus an instant and merciful killing. Then, it was bled through the gills as soon as it was killed to keep the fish fresh for longer (and fish blood stinks, so this kept the meat tasting good). Then the tail cut and the nerve running through the spine severed to keep it from flopping around/twitching too much. Please, look up why it is done this way instead of saying this is cruel. It's the most humane way to kill a fish for food, rather than slowly letting it suffocate.

    민어는 맛보다는 보양식으로 먹는거죠.. 입맛에 안맞는 분들은 민어전 으로 드시면 맛있어요~ 잘 보고 갑니다

    츄릅츄릅츄르릅..민어를 먹어본적은 없지만 보는것 만으로도 침이고이는 현상이..혹시 노량진수산시장에 2명이 가면 활민어이던 선어이던 먹을수가 있나요?? 아니면 무조건 1마리를 모두 사야 하나요??

    I’d like to point out a few things.
    1 fish was killed instantly and the spinal cord was destroyed, paralyzing the muscles. This is the most humane way
    2 blood was drained, so all the unpleasant smells were eliminated.
    3. Board was cleaned after each process.
    4. Asians eat fish intestines, nothing wrong with that. They don’t go wasted
    5. Meat was dried and wrapped, presumably to age the fish for a few days ( we didn’t see it though). Aging sashimi is common especially for larger fish like this.
    6. Y’all white ppl in this comment section has gotta chill
    My only complaint would be the use of them old rusty ass scissors. But koreans use scissors on all food so...

      He killed the fish with a knife using a quick but careless style of Ike-Jime. The piece of stainless steel monofilament wire. It's used in a technique called Spinal Cord Destruction (SCD) and is meant to stop the fishes nervous system from twitching and causing lactic acid build up. The fish is usually dead before this is done and is meant to ensure the meat on the fish is at peak quality. Hopefully I was able to spread some knowledge!

      no. You take a risk when eating sashimi from a just killed fish. However a trained eye can spot the parasites in the flesh, and bacteria have some time to develop when they age the fish before eating it so they are also spotted.
      Health authorities advise to deepfreeze the fish for 48 hours.

    I do understand why some comments say this is inhumane and not clean as this isn't something which you can see in every fish markets around the world. Killing a living creature right in front of you could be very disturbing and I think it's fair if you think in that way.
    But I just want to state the fact that the method shown in the video which is known as 'ikejime' is the most humane and hygienic way to kill a fish. In fact, the way how fish is killed in Europe and North America, which is just leaving the fish out in the air so that it cannot breathe, is the most inhumane way and causes the fish to go bad quicker.

    Again, I do understand that this video could be really disturbing to some and could think this is animal abuse. But if you consume fish regularly, I don't think you deserve to say this is animal abuse because the fish you had last time probably was killed in a way which isn't as humane and hygienic as the one in this video.
