Those are some ingredients from a traditional dish called "Fo Tiao Qiang" or "Buddha jumps over the wall" coz it's so delicious lol. Hope you enjoy the video! He's my fav in youtube❤️
@@Gossamer though I’m not a fan of sea cucumbers and abalone, they are indeed traditional delicacies in China and some other Asian countries. They taste quite nice if prep properly and have a jelly like texture :)
That stuff is in the jumping Buddha soup 佛跳墙 and it's so laborious that we can only taste it during weddings or Chinese new year if the family is hardcore celebrating it
佛跳墙青团
【生艾草外皮】*包完需蒸,熟食
1、150g艾草洗净焯水+1小撮食用碱,煮1分钟捞出,浸冷水冷却备用。
2、艾草挤多余水分,放料理机,加270g清水打碎,过筛留汁备用。
3、25g澄面+7g猪油+65g沸水,筷子迅速拌至半透明无颗粒状澄面面团,备用。
4、300g糯米粉+30g糖+250~275g艾草汁搅匀+澄面面团,搓至完全融合。
*此时面团颜色呈浅绿色,蒸过后颜色会变深。
5、案板撒糯米粉,面团搓长条,切15等份,每份约46g。
【佛跳墙馅心】
1、1个干海参+1个干鲍鱼+纯净水,冰箱冷藏,泡发2天取出(每日换水)。
2、干净无油的锅+纯净水+海参(去除腹部内脏)+鲍鱼(洗去杂质),煮40分钟,注意烧开后转小火。自然冷却后换纯净水,冰箱冷藏,泡发2天(每日换水)。*在处理海参、鲍鱼的全过程切忌碰到油,会影响泡发。
3、纯净水没过花胶,泡30分钟后取出,上锅蒸。蒸锅加1勺料酒,花胶垫2片生姜,水沸关盖,蒸10分钟取出。
4、加纯净水没过花胶,冰箱冷藏浸泡10小时。
5、干贝用纯净水浸泡20分钟,变软后洗去泥沙,放较深的容器+姜片+葱段+料酒,倒纯净水没过干贝,蒸锅上汽,大火蒸30分钟后取出。
6、花菇温水浸泡15分钟左右。
7、汤锅放半只老母鸡(去除内脏)+5个鸡爪+5个鸭掌+150g火腿+半斤猪瘦肉+4片姜+料酒+大量水,大火煮沸,撇浮沫,转小火煮过夜(约10小时)。
8、过滤出的汤汁+2勺蚝油+4勺南瓜泥,拌匀过筛。
9、汤盅内码入花胶+鲍鱼+海参+干贝+花菇+汤汁,隔水炖煮1小时。
10、食材捞出切小丁,拌两勺佛跳墙汤汁,冷却后将馅心分成25克/个,捏圆冷冻30分钟。
11、像包汤圆一样包入馅心搓圆。
12、沸水锅中蒸8分钟至颜色变深。略微冷却后刷层薄薄的色拉油。
*保存方法:蒸熟的青团刷油,包保鲜膜,冰箱冷藏2天内吃完,吃时微波炉加热1分钟即可。

小炒黄牛肉青团
1、200g牛臀肉+半勺生抽+半勺辣露鲜+半勺料酒+半勺鸡汁,抓匀出浆后,放1勺淀粉+少许油,拌匀。
2、热锅热油,牛肉翻炒至变色+1颗杏鲍菇(切粒)+小米辣,炒熟后放少许砂糖+盐+香菜碎+半碗水淀粉,炒匀盛出放凉备用。*水和淀粉1:1调和均匀即为水淀粉。
3、青团包法、蒸发同佛跳墙青团。
瑶柱笋尖青团
1、50g干贝+纯净水+3勺料酒,浸泡30分钟后将干贝清理干净。蒸锅放泡好的干贝+火腿丁,大火蒸25分钟,取出倒汁备用。
2、热锅热油,放1根雷笋丁+干贝+30g火腿粒炒香,再放少许小米椒+1勺生抽+半勺老抽炒匀,淋半碗水淀粉,炒匀盛出放凉备用。
3、青团包法、蒸法同佛跳墙青团。
雪媚娘青团
【熟艾草外皮】*包完免蒸,冷食
1、150g艾草洗净焯水+1小撮食用碱,煮1分钟捞出浸冰水冷却。
2、艾草挤出多余水分,放料理机中,加80g清水打碎,过筛留汁备用。
3、碗中放入108g糯米粉+30g玉米淀粉+10g砂糖,倒入160g艾草汁搅匀过筛。
4、盖保鲜膜,大火蒸20分钟取出,放5g黄油,搓匀分成40g/个的剂子备用。砧板抹熟油,艾草剂子擀成厚薄均匀的面皮。
*熟油:将油倒入锅中烧至轻微冒烟,放凉即可。
【三种雪媚娘馅心】
抹茶奶冻:小锅放6g抹茶粉+20g砂糖+100g清水,小火加热,不断搅拌至完全融化后关火,加5g泡好的吉利丁片搅匀。倒模具冷藏半小时后,切成均匀小块。
豆乳奶冻:锅中放120g豆浆+30g淡奶油+10g砂糖,小火加热,搅匀后关火,加5g吉利丁搅匀,倒模具冷藏半小时后,切成均匀小块。
豆乳酱:2个蛋黄+20g砂糖+15g玉米淀粉,蛋抽搅匀,加200g豆浆,小火加热,不断搅拌至粘稠状态,贴面盖保鲜膜放凉。
奶霜:130g奶油奶酪+40g砂糖,打蛋器打至顺滑,加200g淡奶油打至纹路清晰提起有硬角状态的奶油霜。
抹茶奶霜:6g抹茶粉+130g酸奶搅拌均匀,分出三分之一的奶霜,搅匀再次打发成抹茶奶霜。
豆乳奶冻青团:面皮中挤1层奶霜+1勺豆乳酱+1块豆乳奶冻+1层奶霜,收口包紧。
抹茶奶冻青团:面皮中挤一层抹茶奶霜+抹茶冻+抹茶奶霜,收口包紧。
