桃花糕(和菓子)
【水豆沙】
1、600克白芸豆隔夜浸泡。
泡发后倒去浸泡豆子的水,纱布包裹豆子(系纱布留一点空间让豆子继续膨胀)放入锅中,倒入没入豆子表面的纯净水后大火煮,水微微沸腾后换水,重复2-3次。
2、转微火煮1小时直至豆子软烂,木铲过滤豆泥(期间要加水方便过滤)
静置10分钟待豆沙沉淀后撇去表面的水,再重新加入水,用蛋抽搅混反复2-3次至水清澈。
*步骤1、2的水建议都用纯净水,会使豆沙更透白且豆子易煮透。
3、碗中铺上纱布倒入煮好的豆沙,挤干水分。
再加入360g糖和刚好没过糖表面的水,大火融化糖后加入分成小块的豆沙,用硅胶铲兜底翻炒至水分收干(挂在锅壁不会滑落的状态),包保鲜膜冰箱冷藏30分钟。
*水豆沙储藏:冰箱冷藏3~4天/冷冻3个月左右。
*冷冻的水豆沙使用方法:提前一晚取出后放置冷藏回温。
【火取馅(烘干豆沙)】:300g水豆沙用微波炉中高火1分钟,反复5-6次捏成团后用湿布盖上。
【求肥(糯米饼皮)】:10g糯米粉+6g糖(混合均匀)+5g水捏成团再捏薄,入沸水微火煮至飘起,再煮30秒。
【练切】:火取馅+煮好的求肥,趁热用刮铲搅匀,倒在湿纱布上,对角拎起按压反复至成团,放在案板上揉均匀,包上保鲜膜备用。
*练切储藏:冰箱冷藏2~3天/冷冻2个月左右。
*冷冻的练切使用方法:取出后保鲜膜不拆,包湿毛巾蒸锅上汽后蒸10分钟,常温放置冷却。
【粉色练切】:牙签蘸取少量水性粉色色素+练切,用刮板按压揉成粉色。
【桃花豆沙馅心】:75g练切+11g桃花酱,用手揉匀备用。
【组合成型】
1、27g粉色练切搓圆按压成直径6cm左右的饼。
2、3g练切捏扁边缘并捏薄,放在粉色练切当中,用手指轻推,将两个颜色面团衔接。
放15g桃花豆沙馅心包成球型,盖上湿的茶巾,用竹签在中心点戳压下去。
3、用三角棒平分成五等分,手指捏出花瓣,取菊针压2道印,当中放上花蕊装饰。
水晶桃花羹(含自制桃花酱)
【桃花酱】
1、罐子洗净,用沸水烫后倒扣沥干。
2、取半斤桃花,用干净无水的筷子一层桃花瓣一层蜂蜜叠加,最后淋层蜂蜜搅拌均匀放冰箱糖渍3-4日。
*摘花瓣用手套,保留香气,花瓣不可用水清洗。
【桃花糖水】:锅中倒一碗水+1勺黄冰糖(煮沸腾后关火)+1勺桃花酱,搅拌均匀。
【桃花羹】
1、50g糯米粉+25g低筋粉+5g火龙果汁+50g水,混合后捏成团,包上保鲜膜静置10分钟。
2、面团分成13个等分,每个搓成球吼压扁,用剪刀剪成五等分,捏出桃花瓣形状。
*捏的时候力道稍微向里推,这样捏出来的花瓣就会更加饱满立体。
3、桃花瓣入沸水微火煮至飘起再煮30秒,入冷水冷却后捞出。
4、把煮好的桃花瓣放入碗中,加入桃花糖水。
茶糕(水信玄饼)
1、一撮六安瓜片用85度的水冲泡开,取好看的茶叶备用。
2、13g白凉粉+300g纯净水+10g糖,搅拌均匀,入锅煮至沸腾关火吼,倒入模具中冷却。
3、放入冰箱冷藏6分钟,表面微微凝结后切一刀放入茶叶,继续入冰箱冷藏1-2小时。
