Correction, After reviewing the video I realized the bun was rejected due a tear on the side of the bun. This happens when the bakery does not make a complete slice. We reject the bun for a quality customer experience. This does not happen often. Good catch.
I am not sure if that is the regulation of food safety but why not just wasting the hands instead using the gloves? Btw you and your buddy did a good teamwork!

You’re supposed to change gloves. Think it has to do with possibly cross contamination when touching a meat and then right after touching like some some peppers for example

You should never add old fries to fresh ones. The salt from the old ones causes your oil to break down faster, and recooking the old ones makes them hard and tough, making poor quality product!
Buddy I own a restaurant and throwing a few frys back in for a few seconds for a quick reheat instead of throwing them out is the better option. (Also they don't get hard or tough if you know what your doing.) If you filter and clean your fryers daily like you should and looks like they do very well your ganna save more money reheating I few frys rather trying to save the oil...
Exactly what I was thinking. I worked at a place that served fresh cut fries to order and they never allowed us to re-drop already salted fries back into the oil
Food trailers have a limited water supply, so we use a lot of gloves to maintain hygiene. We also wash hands, but like to play it safe. Thank your for the suggestion and your support❤️

Great question. It takes around 2 hours on a busy day and around 1 1/2 hours on a slower shift.
