U don't use white sugar u use brown sugar and u don't add water to the pot as yet u place the meat in the pot move it around a bit until they're brown then u add some water and u don't cook that meat so big 😅
As a homecook, I'll give this a 4.5/10. Here's why 1. Those oxtail are too thick. 1 - 1.5 inch thick is idea 2. Use the vinegar wash the oxtail instead. 3. Ketchup is optional (though many jamaica of my ppl like to add it yo most brownstew) 4. You add the bean about 5 to 10 mins to end so it hold it shape 5. For a flavorful oxtail, you add the marinade with the first addition of water. Then, prep more aromatics to add half way through and closer to end. 6. Please skim the excess oil off. Nothing is worst that super oily oxtail 7. We prefer oxtail with ony other rice beside plain white rice

I have made this 3 times already and my mom and I loves it. I had added 1 more ingredient to this recipe. I had place a orange slice on top of each oxtail because I felt God in my spirit telling to do so because I can add a little some extra to make it my own. And after the oxtails are marinated for 24 hrs. I don't take them out I cook it all together exactly the way recipe saids to. And it has this orange flavor added to it that just takes it to another level of good.. Tonight I marinated the oxtails for 48 hrs. cause I had hurt my knee trying to bend down on the bus to pick up a coin I dropped in the doorway of the bus. Can you believe it? The man behind didn't even offer to help me pick it up the coin, (he just stood there), knowing I was having a hard time doing so. After I slowly got up, I realized the pain came rushing to my knees as I over-extend my knee even though I have been dealing with stiffness in both knees for a short while. And my knees was finally started to get just a little better until I tried to pick up that coin. So today, I knew I needed to get started cooking those oxtails since its been 48 hrs., and I didn't want them to become spoiled in the refrigerator. The oxtails turn out great. I will say that I will continue cooking this recipe for a long time with a slice of a orange over each oxtail. Thanks for this amazing recipe.
Don't have to make rice and peas to eat with oxtail can be eaten with plain rice dumplings yellow yam and green bananas,but most Jamaicans it's the rice and peas and oxtail for Sundays but it can be eaten with anything 😊❤

Very good Morgan, the secret is really the 24 hours marinade and for a little more spice I would add the scotch bonnet to the marinade.
