Homemade Stuffed Cheeseburgers in Homemade Brioche Buns 🍔

  • These were absolutely incredible, even if I did make the cheese cubes too big and struggled to flip the burgers in the pan 😂 so big tip, either make the burgers bigger or cut smaller cheese cubes for the centre of them!
    Burger recipe:
    - beef mince
    - salt & pepper
    - cheddar cheese (cut into cubes)
    Mix the mince & seasoning together
    Weigh out into balls (I did mine 82-85g each)
    Push a dip in the centre and put one cube of cheese in the dip and wrap the mince around the cheese
    (these can be cooked straight away or frozen for another day)
    Heat a little veg oil & butter in a pan on medium heat and add each burger in once it’s melted & sizzling
    Flatten the burgers and cook on one side until browned then flip and repeat
    Add cheese slices (or cheddar/mozzarella etc) and leave to melt for 2-3 mins
    Buns recipe (makes 6):
    - 125ml warm water
    - 1 tsp yeast
    - 1.5 tbsp warm milk
    - 1 tbsp golden caster sugar
    - 225g strong white flour
    - 2 tbsp softened butter
    - 1 egg (+ 1 beaten for glazing)
    Mix first four ingredients in a bowl and leave for 5 mins
    In a large bowl weigh out the flour, add a pinch salt and rub the butter in to make a breadcrumb texture
    Make a well in the dry ingredients and add the wet ingredients
    Mix into a sticky dough and then tip onto a floured surface
    Knead dough for 10 mins, once bouncy place the dough in an oiled bowl, cling film and leave for 2 hours
    Once the dough has doubled in size knead for 2 mins adding flour if needed
    Weigh the dough and then portion into equal sized balls
    Put the balls onto a lightly floured tray and cover with oiled cling film and leave to prove for an hour
    Bake in the oven at 200C/180C fan for 10 mins or until browned and the base sounds hollow when you tap it
