Trafalgar is great for similar reasons that I like Bank for (and youve got the National Portrait Gallery which is great. I love museums and places when the weather isn’t great)
The best place to start is by getting out there with your phone and photographing what you enjoy, we all start somewhere and it’s one of those things where you can only improve by doing it more. :)
Fairly sure that office courtyard at the start is the site of where one of the Jack the Ripper murders happened. Did a walking tour and they told us there was a row of terraced housing at that location.
Usually I know that my scene is good before I take the photo, then I just need to wait for the right subject moving in the right way. I could take hundreds of images in a day and only get a couple I actually like... Defining good images for me is, if I like it, then that's what matters most.

Spittalfields is great. There is shopping area hidden away that is great for photos. Also around Bank I think there are hidden areas as well.

In and around Sloane Square, there are lot of characters around there. I was there the other week and wished I had my camera.
I always try to have my camera with me when walking around. You never know
