- Two premium steaks: A modest looking Irish grass-fed, dry-aged Hereford Ribeye runs against a slightly heavier, prettily marbled Australian wet-aged, grain-fed Black Angus Ribeye. Sides: 24 hr fermented milk (using kefir grains), 7 days fermented vegetables. Some ghee (clarified butter) is added to the pan.

Really would be better off using a high smoke point oil to sear the steaks and finish it with ghee, or whole butter for an even nuttier tasting steak.
Irish looks more traditional because it’s actually from within the cube roll itself (5-7th rib) whilst the Aussie steak is more chuck side of the roll, say from the 3rd rib.

Why do ppl marvel at the fat deposits and streaks in meat when grass fed animals tend to be leaner with fat?
You fry the meat too much. After that, it becomes dry and not tasty. The steak should be juicy inside. And why do you use the
butter ? Why?
Best steak is always cooked in butter.
If you know steak well, you know butter is the most delicious way to cook it...
The edge is overcooked, should done with recerse sear or sous vide.

Kefir. I recently searched about it and it's like a superfood from ye olde. Apparently, it's rich in probiotics and very beneficial for our health.
It's delicious with fruit puree added. Kinda like a mix of yogurt and sour cream. Good stuff.

C. Cosereanu Nah I also cook my steak. I have watch his video for 2 years, I am very used to his filming so I can tell. The juice of MR steak was not there. The firmness when he cut, his knife here is super sharp. Your statement is way too shallow.
As someone who grew up eating Hereford/Bradford from the Pampas region pasture everyday, I can assure that any Hereford is one of the best experiences you can have when it comes to beef, it's a very underrated breed, simply amazing. The crossbreds between Hereford/Bradford/Nelore/Angus are even better.
Too bad you didn't use charcoal (which is the best way) and it's somewhat overcooked. And to be honest those sides are a bit ridiculous, I can tell from a mile away that you came from a country with little to no meat culture, no offense.

A tip for those nice knobs of fat. Stab with a thin knife and twist. Breaking it up allows the heat to get in the middle faster. More of the fat turns to that gummy good stuff. 10:10 "My ancestors were hunters and warriors you ****! More!"
