I have a gas stove. It doesn't give a temp on the knob. Just somewhere between high and low.

I have the 8quart round Lodge Enameled Cast Iron Dutch Oven that I have used for many years. Use to do Dutch-Oven cooking once a month in Boy Scouts when we did outings (charcoal version). I converted a lot of the recipes to use in the Oven not the charcoal Dutch-oven. One of my family favorites is Mountain-man breakfast in the Dutch-oven. I could send you some of them since I know you would love them!
