In my (much) younger days I did quite a bit of fresh water (mostly trout and catfish) fishing and my family did some salmon fishing off the Pacific Northwest Coast. (USA) I was taught to clean my fish right away or it wouldn't be as good to eat. I was very young, but I know we cleaned the salmon as soon as we docked. I remember the seagulls fighting over the entrails. I've never bought one, but I always assumed the whole fish in the store was already gutted. I am a tad confused. :) Thank you so much for your efforts to educate us!
Thanks for such an educational video. I hope Evan has been taking notes! 🤣 It's a shame about the audio issues though. Hopefully you guys can figure it out eventually, I think it's taking a lot away from the otherwise great quality of your videos.
That made me laugh out loud! Yeah, I think we finally solved it… by tossing the old microphone and buying a new one. So far, the problem has disappeared, but unfortunately, there’s not much we can do about the videos we filmed previously.
Descaling first keeps scales from scattering everywhere, making the process cleaner and easier to manage. Scales can stick to the flesh, cutting board, and knife, adding extra cleanup. Plus, it protects the knife-scales are tough and can dull the blade more quickly.

Yes, most whole fish in stores today are already gutted and usually cleaned. We just used a whole fish to demonstrate the full process. 😀
@@w2kitchen Got it. Thanks so much for taking time to alleviate my confusion! Can't wait to watch today's follow-up video. :)

I thought Ikejime involved threading a wire through the fish's spine?
You’re absolutely right. I believe he was just mentioning the method rather than fully demonstrating it.
Wait, if you're going to cut off the skin anyway, what's the point of de-scaling the fish in the first place?
