I scramble bout 2-3 eggs and add this at the end of the rice cooking process. Some folks add eggs to bind everything together but you cant really taste the end with this method.

Yes those oils are okay. Chinese cooking, we like oil that are flavorless so it doesn't affect the flavor of the dish. But if avocado/extra virgin olive oils are what you have, use it. Oils has high smoke point are best when stir frying stuff.
