I think a good video would be a FAQ about changing quantities for whatever sized pans and adjusting baking times for same quantities in different sized pans. Always confusing for me, and I don't want to buy so many pans!

You should never put something hot in the fridge. Firstly, it will increase the temperature in your fridge meaning your fridge waste energy getting back down to the correct temperature and also, this is a bad thing for the rest of the food in your fridge and could make certain things unsafe to eat. So you should always leave things to cool to room temperature before putting into the fridge x

We like to use Callebaut which can be bought in most cake decorating shops, or online. Other good brands would be Valrhona, Green & Blacks - you basically want a white chocolate with a high cocoa percentage 😘

Done it Im the microwave, oven, and air fryer. Air fryer in 40 second increment’s is the way to go.
What brand of white chocolate would you recommend to make the caramelized white chocolate?
We like to use Callebaut! But really any good quality white chocolate that has a high cocoa percentage will work well :)

Online unfortunately. Or Amazon UK. Or load up when you’re home like I do with sprinkles 😂 cake craft company are good tho for supplies
It can be a bit tricky to find cake decorating stores here in the UK, online shops will probably be your best bet 👌🏼

I'm a pretty competent baker but just can not get a hang of caramelising white chocolate in the microwave without it seizing!

I actually prefer to do it in the oven, even though it takes longer. It’s smoother that way. But both ways are great!
Also, it will seize! And that’s ok, you just need to keep going and eventually it liquefies again!
