    ►STORING MILK KEFIR GRAINS IN MILK
    For up to 2tbsp (40g) milk kefir grains per quart/liter of milk. Store in the refrigerator. Once you see the milk separate in the fridge, that indicates the kefir grains have consumed the lactose sugar in the milk that they utilize for food. * It does not indicate spoilage! It indicates fermentation. *
    At the time of separation, remove the milk from the fridge & strain the grains. Repeat the process by adding new/fresh milk to the grains & store in the fridge until separation of milk occurs once more. The grains in the quart/liter of milk will last about 7 days if you have 30-40g of grains in the quart/liter of milk. You could get up to 10 days if you have less than 30 g of grains. It may be a couple days +/- . Just watch the milk, that's your indicator. When it separates, it's time to switch milks.
    Even though the milk has separated, you can drink the milk that the grains were stored in after the grains are strained out… because it is indeed kefir… It’s just a very slow developing kefir because the cold temps of the fridge significantly slow down the fermentation process.
    Tip: the more milk you add in ratio to the grains quantity, the longer it can store in the fridge before milk separation occurs. If you have more than 40g of milk kefir grains, then split the grains and place each half in a quart/liter jar of milk.
    ►STORING WATER KEFIR GRAINS IN SUGAR WATER
    Place the water kefir grains in a 1 quart/liter jar or larger. Add 1-1.5 tsp (5-7g) sugar to the jar. Store in the refrigerator and feed the grains the same amount of sugar every 2 weeks. Make a notification on your calendar so you don’t forget. The grains can starve to death, so remember to feed them every 2 weeks! Also, don’t over feed them sugar thinking they can go longer with more sugar. This is because if they are over-fed, they can disintegrate and turn to mush.
    Unlike storing milk kefir grains, I do not switch out the sugar water. I keep them in the same water week after week, just adding the sugar bi-weekly.

    I must say ,your video is beautiful, simple ,detailed, every question is covered.Truly many thanks .I'm west African lady who lives in NY ,I have an advanced hypothyroidism so I struggle, 6 yrs ago after a big inflammation, I started changing my lifestyle to improve my health. EVERY MONTH I spend on milk kefir since I must reduce my lactose and calcium ,so your video will be helpful to reduce my spending after I get my kefir grains .the journey has began.     I make kefir with lactose-free milk all the time. The glucose and galactose seem to be enough for the fermentation. An old Indian scientist told me this. It seems to be working. She also said to add a teaspoon of raw sugar for faster ferment. There seems to be so much info out here I try everything. Love your videos.

    I'm so excited 😊 I'm 60 years young...I have been making my water kefir for way over a year...I love it! I have wanted to try milk kefir but didn't want to buy those grains too....now since my water grains have multiplied...and I have a can of coconut milk, I'm thrilled about setting it up as soon as my double batch of kefir water is done in 2 days...Yay...thank you ❤️ And adding blended berries to the finished milk kefir product sounds amazing!

    I have been doing it with coconut milk , and to have a “Greek Yogurt “like , I add organic gelatin powder ( diluted sim warm water ) to the mix , before putting in the refrigerator. It is perfect !!thank you for your amazing work . I love it 🙏🏻🌷✨🙏🏻

      @@user-om2dm1fv7u I dissolve a tea spoon of a good gelatin ( I buy from Amazon ) in half glass of warm water and add to the coconut kefir . Put in the refrigerator and next day you have a thicker , Greek yogurt like kefir . It is delicious and even more nutritious too . Thanks for asking an any other doubt , don’t hesitate to ask 🙏🏻🍀

    Just a tip for coconut milk, I ♥️coconut milk & been using for cooking, coffee, tea & baking. I buy mine at the ASIAN STORE they have the best price & best brand to buy is the AROY-D not in the can, get the one in the carton 33.8fl oz for $3.49,,,,99.95%coconut milk that’s why it tastes so good. The best coconut milk in my opinion😍

      Unfortunately, the remaining 0.05% of the contents is Polysorbate-60, a chemical emulsifier, thickener, and stabilizer. There are plenty of other brands out there that are delicious and that contain 100% coconut milk. Some are organic.

    I asked you this question as well when I bought you a cup of tea!
    Do you change out your milk that you're holding your grains in? Do you periodically have to toss out recycle compost your grains as they grow? I could see a video in the future of just answering all of our questions! I learned a lot! I did make keeper for about a year and experimented with plant-based versus milk and combining. I have not been successful with water keeper but I think I got a bad lot to start with. I will persevere. I think keeper is one of the healthiest things we can put in our body.

    A quick note- rinsing the animal milk off of the water kefir grains does not make it vegan. We do not use animal products to support an end intention of goal- it isn’t about the residue, it’s about not using someone’s body without their consent for our benefit (milk from an animal who likely didn’t want to be used for that purpose), especially when it is not necessary.     Grocery stores are selling coconuts these days for $2, these are the ones with husk removed, dark brown color shell, the coconut meat inside is thick with water. Make sure the coconut did not go bad, before you drink the water. Indian grocery stores have them too.

    Each person may have different reaction with kegir drink.
    My body react well with milk based kefir but not with water based kefir.

    I have been making kefir from cow milk for years and never even thought of adding sugar to the milk. And it works just fine! Admittedly, I have never tried making any alternatives milks kefir, maybe those cannot be produce without added sugar. But milk kefir certainly can.

      Milk kefir can ferment without added sugar because the lactose in animal milk IS sugar. That's what the probiotics are feeding on, natural milk sugar. Plant milk does not contain lactose sugar nor any other type of sugar... which is why it has to be added.

      ​@@CleanFoodLiving This was precisely my point: lactose in the milk should be sufficient for the culture to grow so I don't understand the need to add any extra sugar (yes, I know very well that lactose IS sugar). So what is the point of doing that? Will it yield more kefir? It's not a criticism, a genuine question. I would try adding sugar if I knew what the advantage of it was...

      @@nataliawilson9477 I don't understand where you are coming from. No where in this video did I say to add sugar to cow's milk. No where in this plant milk video am I demonstrating using cow's milk for kefir making. The sugar is added in this video is to either nut milk, coconut milk or seed milk, not cow's milk. The milk kefir grains are stored in cow's milk and never did I say to add sugar to the cow's milk they are stored in. Perhaps something in this video was misunderstood. Please send me the specific time point in the video where you think I said to add sugar to cow's milk. 👍👍

      @@CleanFoodLivingI think she is missing the point, thinking that you’ve been adding the sugar to aid the milk kefir grains with fermentation, when in reality the sugar is added to aid the PLANT milk. The milk kefir grains just happen to be one of the options you can use.

      This is for making plant based kefir for people who do not want to have dairy. The plant milks will need some sugar because unlike cows milk, It doesn’t have the sugars needed to ferment. This video has nothing to do with anything about “Cows milk”

    I loved your video!! I've been making L Reuteri for over a month with no issues this easy Kefir has been my Achilles heel!!!! First I used ultra pasteurized milk I was told that was not the right milk but my Kefir was beautiful and I had grains. I threw away the grains in fear I had messed it up and now with the new whole milk, no grains were left unless I smashed them LOL! I was using dehydrated/powder kefir grains but will try with fresh grains and see how I do. Thank you 😁

    Very engaging video presentation❤ I have a question 🙋why have u never made videos or even mentioned about beet kvass. . I have attempted it 4 times in different ways.. My kvass has always formed a thick spongy white layer on top..i see under the spongy white film, the kvass is clear, Is it safe to use once the spongy white layer is removed...... Please please please, make few videos or atleast 1 video covering this problem with beet Kvass. . And I live in India , my region has 100 deg F now in summer

    I freeze both types for longer term storage. Mine would continue to multiply if I kept them in the fridge.

    Thanks for the detailed explanation of alternate milk and water kefir. My milk kefir grans are growing like crazy and I am thinking of using some of them to make a coconut kefir for a change of taste. I don't have as many aater kefir grains, so I will end up using my milk kefir grains.. I love drinking kefir and have seen many changes to my gut and digestion since I started drinking them.

    Question : is there a reason you did not mention soy milk or can it be used to make kefir the same way you demonstrated with nut and seed milk ? Again thanks for your work Christoph

      Yes, you can do soy milk the same way as nut milk. I didn't mention it because homemade soy milk kefir does not taste good! It's very bitter😝 If you want to do soy milk, I recommend store bought boxed because they heavily process the soy to remove the natural bitter flavor so it tastes mild and smooth. But you can certainly make your own and see for yourself!😊🌸

    Ok, I have a question. I missed the part in your videos how to store the milk kiefer grains in the fridge? How much milk, and do you need to change out the milk at intervals to freshen? Thank you

      If you want a break, they last in the fridge up to a week in milk but, if you have grains you need to store longer or you have too many, you can freeze them by placing them in a container covered in milk powder;
      I have a bunch of extra stored grains from a year ago, and I used them and they came back to life ! Freezing and storing them is a good backup in case anything happens to your grains, or if you want to give any to other people….. ; )

    Such a great video. Thanks for your detailed explanation. I was wondering about your “home jars” you keep in the fridge . Do you frequently change the water or milk in these jars or do you just keep topping them up with sugar on a regular basis till keep “feeding” them. A short video on these methods would be amazing. (Another video idea perhaps haha)

    This is so helpful, thank you. Question: if I were to want thicker Kefir; what do I do? Do I just add more nuts/seeds/coconut to less water or would you add a thickener?

      For thicker plant milk kefir, don't strain the pulp. After blending pour it all into the jar and ferment the same as demonstrated... The pulp will thicken it up, but it will never be like yogurt.... 👍😊

    Wonderful! I like unsweetened yogurt kefir and don't mind a little fizz, but not too much carbonation. Does more carbonation always mean more good bacteria?

      Yes, leave them out to ferment a little longer then usual (36 hours) then drain out all the whey (under a strainer, let the watered part come out first and as soon as it turns to milk, then switch it into a separate bowl); you don’t want to leave them out too long or they’ll starve and it creates stress for them;

    Is one table spoon of sugar for a quart of kefir too much to consume? I am not questioning your recipes. I love them. It is just that I don't use sugar in my food at all, but I would love to make plant base kefir. I heard somewhere the during the fermented process the sugar amount will be lost due to kefir grain eating it. Maybe the final product contains less than one table spoon of sugar. Any advice?

      Yes that is true, the kefir bacteria are eating the sugar so the sugar content is significantly reduced.😊👍

    Can I try to syringe out the whey from both of these plant-based kefirs? Would it be just as nutritious? The reason why I'm asking is because my son, who has Crohn's disease, is very sensitive to food, but I'm trying to get the probiotics in him.

      There is no whey in plant milk kefirs. Whey only exists in dairy. The separation you are seeing is water, not whey. The water is fermented though so if you want to siphon the water out, yes you can do that. Just be aware it's not whey.

    I just made some kefir with coconut milk and milk kefir grains without sugar and it fermented totally fine. My understanding is that I can do this process a couple times and then use milk the next couple times to feed and then back to coconut again. What say you? The reason is that I don't eat sugar.

    Is it really necessary to strain the plant milk-could we just leave the pulp in it both for convenience and to thicken the final product (not to mention cost effectiveness; this is what i do with my yogurt!)

    My water kefir grains are not clear like yours, they are brown colour. I have been using panella from the begining, it works perfectly fine, they grow happy and all that. Could the colour be brown due to use of brown sugar, panella and simlar dark sugars?

    Canned coconut milk is 60 percent coconut milk and 40 percent water. Can I use this successfully also is adding sugar to nut/coconut milk necessary. My friend doesn't add sugar and seems ok. Thanks in advance.
