I love the learning experience, but I have to say, the soundtracks are IMO completely redundant and puts the ears into sensory overload. Won’t stop me watching, but could be so muck more relaxing.

So do you think this would halve well with the appropriate sized springform pan? What about subbing maple syrup for the honey? 1:1 ratio? This looks fabulous! My husband loves cheesecake so this will be the perfect treat especially since it’s probably been 20 years since I’ve made them on a regular basis.

Where’s the recipe for what you made in the video? The link is for a blueberry swirl cheesecake and even though you write that the recipe is the same as what you made in the video sans the blueberry swirl, it isn’t.

It’s a bit disappointing because you seemed to love what you made in the video and that recipe didn’t have sour cream nor lemon extract/zest (why extract and not fresh juice?). Also, the published recipe doesn’t have honey. So it’s just confusing. Was it that the video’s cheesecake cracked? Or a texture taste thing?

YES maple syrup makes a great substitute and you can absolutely halve the recipe.
