    This raspberry sauce is fire!! 🔥🔥🔥 I was nervous to make it because I'm picky with desserts, but it seriously came out amazing. Super rich raspberry flavor, not too sweet or sour, just perfect 👌 Thank you!!

    Right amount of sweetness, not too sweet, but just enough. Fist time making cheesecake, didnt really like them before that much but now I do😉, made it twice in two weeks! One with cream cheese another one with half cream cheese and half ricotta, also delicious!

    My husband's favorite cheesecake was from that cheesecake factory. I would order one for his birthday every year. I am a horrible cook and burn everything so I was not going to attempt making a cheesecake.... I saw your recipe last month and decided to give it a try. Best thing Ever!! He loved it. I didn't burn it and it turned out perfect. I even did the water bath. As he's eating the last piece last night, he said that this was better than the other which is no longer his favorite.😍 Thank you so much for the recipe and tutorial. I did have to watch several times, but paid off in the end. This is going to be made at least once a year, maybe for our anniversary too.💓

      @@arianavalderrama7097 it was good. I ended up adding more melted white chocolate because I wanted to taste it more. Overall, it was good. It wasnt sweet at all. I would suggest tasting the batter for your desired sweetness.

      Thank you so much! :) No, I don't grease the sides with anything. This particular pan is nonstick. You can spray the sides with baking spray through :)

      Hi! This one is amazing!! No, you don't need to wrap it in plastic. If you have a glass or plastic cake dome, you can cover the cake with it.

      Big enough for your cake pan to fit in it.

      The pan was 18x13inches. Any size pan will work as long as it fits the cheesecake and you can water to it. Enjoy! :)

    How long would you bake this for if you wanted to bake for around 1 hour??

      This cheesecake needs to be baked at 300F for 2 hours. I do not recommend adjusting the temperature or the time.

    Happy New Year! Can this cake be made without the ban marie? I ruined my cake. The crust was water logged. And I wrapped a ton of foil around it too. How would I modify this recipe without the watered roasting pan? Thank you!!!

      Happy New Year! Oh, no! I'm so sorry that happened. I like to use extra-wide foil so I have no seams for the water to seep through. You can place a pan of water onto a second rack directly below the cheesecake. The cheesecake may puff up a little bit more and won't be quite as flat on top but it will taste delicious! :)

      I’ve made cheesecakes w/out any form of water bath and it doesn’t crack or sink on me so I can help you. Add about 3 tablespoons of a starch to the batter (could be flour or cornstarch), keep the mixer on low or medium low to prevent over aerating the batter, make the crust go up the sides of the springform for extra insulation, and gently tap the springform on the counter for 30-45 seconds to knock out any remaining air bubbles. I also cook mine for 1 hour at 300 and then immediately turn the oven off and leave the cheesecake in the oven with the door closed for another hour before taking it out to cool to room temp.

      I personally haven't made this recipe using individual cheesecakes. However, this is the timing and temp I use for a different recipe: bake at 325F for 40 minutes, then chill

      Thank you! :) You can use mascarpone here in place of the cream cheese. If you want to use ricotta, I recommend using just 1 cup, replacing 1 package of cream cheese.

    Suggestions on replacing whole berries in the batter?
    Just my own preference but can't do the seeds

      You can make the raspberry sauce ahead of time and swirl it into the cheesecake batter. Maybe pour in half the batter, add spoonfuls of raspberry sauce, then add more batter and finish with more sauce on top.

    Di I have to add more water to the pan during the baking process? I try NEVER to disturb that cake when it's baking. Just asking.

      No, not necessary! I try not to open my oven either! Just fill the pan with as much water as possible right at the beginning

      Keto sugar should be work well here! I haven't tried using almond flour to make a crust though!

      This cheesecake would be a little tricky to make keto. You will need to omit the white chocolate and use erythritol instead of the sugar. The crust is also not keto friendly!

    My stupid spring pan started leaking!!! One of the bolts came undone. Any suggestions on what to do with this now Graham cracker crust and cheesecake mixture

      Oh, no!! That's too bad! Maybe try making cheesecake bars? Line a brownie pan with parchment paper, pour in the batter and try baking for about 1 hour. Hope it doesn't got to waste!

      Hi! You can use this recipe for small cheesecakes, too. You can prepare half the recipe for a 6-inch cheesecake. The baking time will be around 1 hour. The flavor will be the same

    Hi. I made this in the summer and was so excited, however, it fell apart while trying to cut into it. Very crumbly. Do you know why?

      Hi! Try dipping your knife into hot water before slicing the cheesecake. This will get you cleaner slices. Also, I recommend cutting the cheesecake while it's still really cold. Once it's softened at room temp, it will become very crumbly and harder to cut.

      No, I don't bake my crust before adding the filling. However, you can add this step! Bake for 10 minutes, cool slightly, then add the filling
