Unlike regular ice cream, kulfi is denser and takes longer to melt due to its slow-cooked, condensed milk base. The preparation involves simmering milk and condensed milk together until thick, then adding aromatic spices like cardamom and saffron for a luxurious taste.
Kulfi can be customized with various flavors, such as mango, pistachio, almond, and chocolate, each providing a unique twist to the classic recipe. The mixture is then poured into molds, frozen overnight, and garnished with chopped nuts and rose petals, making it a delightful and refreshing dessert perfect for any occasion.
Kulfi Recipe
Ingredients:
Base Mixture:
Condensed milk: 250 grams
Milk: 1 liter
Bread: 1 piece (crumbled)
Thick cream: 250 grams
Cardamom powder: 1 teaspoon
Saffron strands: 8-10
Flavor Variations:
Mango Flavor:
Mango: 1 (pureed)
Yellow food color: a few drops
Pistachio Flavor:
Pistachios: 8-10 (finely chopped)
Green food color: a few drops
Almond Flavor:
Almonds: 8-10 (finely chopped)
Chocolate Flavor:
Chocolate: 50 grams (chopped)
For Garnishing:
Chopped pistachios or almonds: 1 tablespoon
Rose petals: a few
Method:
Prepare the Base Mixture:
In a heavy-bottomed pan, cook the condensed milk over low heat until it thickens.
Add the crumbled bread pieces and mix well.
Pour in the milk and cook the mixture, stirring continuously.
Add the cardamom powder and saffron strands.
Use a hand blender to blend the mixture until it reaches a smooth consistency.
Flavor the Kulfi:
Divide the mixture into separate bowls based on the desired flavors.
For Mango Flavor: Mix in the mango puree and a few drops of yellow food color.
For Pistachio Flavor: Add the chopped pistachios and a few drops of green food color.
For Almond Flavor: Stir in the chopped almonds.
For Chocolate Flavor: Mix in the chopped chocolate.
Freeze the Kulfi:
Pour the flavored mixtures into ice cream molds or a deep container.
Cover with aluminum foil and insert ice cream sticks.
Freeze overnight until firm.
Serve:
Remove the kulfi from the molds.
Garnish with chopped pistachios or almonds and rose petals.
Serve chilled and enjoy!
