Hey Marshall, have you tried Tuyo(Dried Herring), Tinapa(smoked Mackarel), Daeng(Marinated Milkfish) , Tulingan( Mackarel, versions by region - Batangas best for me) with eggs and fried rice? Inexpensive Filipino dishes. Pretty good. BTW, Tuyo with eggs is jokingly called Filipino 'Ham and eggs or poor man's Ham and eggs.
Chavacano/Chavacana are decendants from Spanish and Chinese blood also thriving long time ago, the same region with the Muslims. They speak broken Spanish, a mixed dialect.. fyi
Its mostly food from luzon and visayas, which are kinda bland and sweet, which most foreigners don't like, but if you go to mindanao(specially western and southwestern mindanao) you will notice the foods there are similar to that of malaysia and indonesia, which are foods that are so uniquely flavorful with a kick of spice.

man, food tours should be spread out to three places max over a whole day or at least spaced out every two hours and only tasting done, not actual eating of full meals. otherwise it's more torture than a treat. all those places and their food look good. i wish chicken piangang had a more distinct taste---it looks so exotic but doesn't taste too different. i miss the prices you include when you eat out on your own.
I wouldn't call it muslim food. There's really no religion centric food in this part of the world (aside from certain restrictions). Coz if there's Muslim food there should be catholic food. Rather food influenced by malay or arabic cuisines..

Zamboanga City my hometown, how I missed the BBQ at Fil-Er Garden, Curacha and other seafoods at Chimangs, tamales and chorizo Zabala way back.
