I remember when we were just kids my parents used to just wash and slice bittermelons soak in salt, wash and eat as a salad😂 though we kids didn't eat them, we know they made my parents' lives longer 😍 bittermelon remains one of my favourites to this day.

I hated fu-gua growing up until I had it in a restaurant where it was stuffed with conpoy, steamed and sauced with a clear savory sauce. So delicious! Now I love it especially in Indian cooking.
I accidentally bought the dace with fermented vegetables and made it using this recipe. Afterwards I tried it with the black beans and I think it was much better with the fermented vegetables. I suggest you try it! Thanks for the recipe!
Was happy and pleasantly surprised when I saw this video as I only had this fish last week. I just steam it and have it with white rice. Yes, please use the fish for other recipes please Mandy! It is very easy to open a can and be able to cook with it straight away vs fresh meats which require preparation.

Hi Wendy. I just watched your vlog tonight. I love bitter mellon. I tried to copy for cooking but instead of the canned fish which you used, I used salted dried fish. I soaked the dried fish in water for 30 minutes to remove any chemicals & saltiness. I used the Garlic Black Beans Sauce to compliment with the dried fish & bitter mellon. The outcome of the dish was superb. I was able to buy that canned fish you used for cookig this dish at our Local Asian Grocer (Ranch 99) here in Fremont, Ca. Did not realized that there are many kinds of these canned fish & I do not read Chinese.
My first exposure to bitter melon was in a homemade Vietnamese soup. I thought something in the spoon was trying to bite my tongue off! That was almost 50 years ago. This recipe makes me wanna try again.
I got hooked on it in dumplings. I didn’t like them at first but then somehow ended up craving them later on😅. Then I ordered it stir-fried with eggs and that’s really good, too.

"Fried Dace" was such a go to food when I was a College student. We'd always buy a few cans at the start of the semester and towards the end when money was tight, this fish plus a bowl or two of white rice would hit the exact right spot. This can of fish by the way will last for a while. Since it's packed with flavor, you only need a little bit to top the rice with and you'd be all set. If we were super tight with cash, we'd make congee which is if i remember correctly like an 8 or 10 to 1 ratio of water to rice and top it with the fried dace. Brings back good memories
Canned Dace has a long cultural history in the US as well; its equal parts sad and beautiful. (It was one of few canned foods that were successfully brought to the US with Chinese immigrants I believe as far back as the 1920s. It was a taste of home for so many and its a cultural focal point for innumerable people - eaten on its own, cooked with vegetables, served over hot rice. It's such a humble kitchen staple but like potatoes for the irish people, it was a lifeline for the times and it persists into the modern palette)

Hi, Mandy! I've been curious about bitter melon for years but I've also been afraid of it for just as long. Now you've shown me a way I think I will actually try. We grow bitter melon at the community garden where I volunteer. A Korean man I know there loves that he can get fresh melon there. I asked him about how he likes it. He grinned and said, "It's an acquired taste!" 😅 PS I'm gonna get canned fried dace with black beans at our huge international market here in Nashville, Tennessee!

LOL … I didn’t like bitter melon as a child , then as adult I tried it again and love it . Reading your comments brought back many of the good days when I ate meals with my grandparents …All the salted stuff and everything you mentioned here . My kids are so North American and won’t try these Unami dishes . I grew up in the western world but I had the privilege to live with 3 generations in one house so I learnt some of the Chinese traditional meals . I missed my salted fish and rice ! My grandma would salt her own fish and hung it up for days …it was very fishy BUT SOOOO DELICIOUS! Nostalgia moments 😊 . Thanks for reminding me of the good old days !!!

As long as they're not allergic to it, chopping something kids hate into tiny pieces and mixing them in with other strong flavors helps introduce them to the flavor with positive association. With bitter melon, chopping it up finely and mixing it with zucchini in a stir fry (only use a little bit and gradually add more as they get used to it) is a great way to introduce it.
Count me in for more canned fried dace in black bean recipes. I've been wondering why I see it all over the world in chinese grocery stores. I enjoy good quality canned fish.
My favourite is bitter melon omelette, my aunt used to make it for me all the time with a tiny bit of xiapi (baby shrimp) for umami bombs inside! You should try it, maybe you can improve it, i doubt it though c:

You can skip the canned fish but use fermented black beans with some fresh fish slices, in oyster sauce. Works just as well.

If it’s super fresh, try steaming or blanching it and served with a soya sauce and sliced red chilli dip! Yum!
