This is only semi correct,. He is literally pulling the whole dough back where as if he had the correct technique the dough ball would be stationary and the bottom of the dough would just roll to the top.
There are multiple ways to do it and have the same quality pizza with the correct shape and consistency, or so I'm finding out during my training shifts.

If this was true then dominos wouldn't be notorious for having flour all over the table lol. They also wouldn't be notorious for picking the food out of the trays that fall off of the pizzas and put them back on the line and they also wouldn't make us make food without gloves 🤷🏽♂️.
