This is my childhood favorite pie. My grandmother always had one tucked away for me on holidays. This year I decided to tackle making it myself using this recipe. It came out absolutely perfect. I was able to deliver a slice to my 94 year old grandma. Meant so much.

Made this and it was delicious! As for my pie dough scraps, I roll the leftover out and cut into triangles with a pizza cutter, brush on some melted butter then sprinkle on some cinnamon sugar and bake at 350 degrees until the crust triangles are light golden brown around the edges and baked through but still tender. Then we enjoy a yummy snack. These are also great served with vanilla ice cream.

This is my sons favorite pie but with a Graham Cracker crust. When I make a flour crust I always roll out the leftover, put it on some foil, sprinkle with cinnamon and sugar, and bake till crispy. My son is 40 years old and he still gets excited for his cinnamon crisp, although he now has to share it with his 5 year old daughter. ;)
Failed my first pie because the egg portion was cut from the video so I didn’t temper my eggs and added them when the butter and coconut was already mixed in. My second attempt turned out perfectly and is one of the best pies I’ve ever eaten. Thank you!

For milk it says 1 1/2 cups or 720 ml. I followed the cups measurement - but I think the millilitres conversion is 360 ml as you mention on the video.
I absolutely love this pie recipe! However, I highly recommend following the written instructions on the website rather than the video. Two years ago, I followed the website's step-by-step guide, and the pie turned out perfect, everyone loved it! Last year, I followed the video instead, and unfortunately, I forgot to add the eggs because the video skips that step. The result was a runny pie (lesson learned, haha!). I'll be making it again this year using the website instructions and can’t wait for another success!
OCD tip-I use young Thai cocnut meat-NOT the dry brown ones- and the water after laboriously cutting the shells in half with a heavy meat clever then an upside down tablespoon to strip out the meat. It will have hard and dark brown bits you must trim away completely with a sharp paring knife. Next, I liquify the meat and water for several minutes. I don't like chunks of coconut and this mixture adds a consistency and mouth feel you cannot get from corn starch or flour.Very time consuming-yes. Tedious-yes. Worth it-absolutely YES. No coconut extract needed. Thanks for posting your amazing recipes. You are my go to guy for extra yummy recipes made with LOVE! Thank you. A fan.
I have two little boys and we keep the pie scraps without scrunching them up (still rolled out). They use a butter knife to cut it into leaf shapes or whatever they want. They then paint them with watered down food coloring. Then cinnamon sugar and bake.
I have 6 children (aged 42-19) and I've always made "piggies" with left over pie dough. Brush rolled out dough with soft butter, sprinkle with cinnamon & sugar, roll like cinnamon buns, slice into 1/2" circles, bake. Yummy! ❤️

I normally would agree with you about the pie crust, but after making John's recipe of his perfect butter flakey pie crust, I am hooked . It really is perfect and it holds up to the custard , it stays flaky and toasty and does not get soggy even after several days , I it stays around that long, this recipe is the best coconut pie I've ever made. I also make his vanilla custard pie which is about the same as this one it is perfect too .

To answer your question about the spare pie crust, I usually just throw mine away but sometimes I toss it in the deep fryer and then roll in powdered sugar.

Hi John! I have never used powdered sugar to make a whipped cream before. Is there a difference in the consistency versus using granulated sugar? Does it still peak the same?
I take the excess pie dough and make pizza cups. Press it all together, cut out rounds of the dough, fit them into muffin cavities and either par-bake them or fill and bake with pizza toppings of choice. So awesome. Sometimes, I fill it with other things instead of pizza toppings. Apples are another way I fill the cups.

I love everything coconut as well including the smell from that sun tan lotion but I like that same smell in Malibu rum as well as the taste even though it must be fake. I did see a while back that Bacardi also made a coconut rum but never got to try it and don’t know if they still make it.
Three things, cling film works best for holding beans or whatever for blind baking. Secondly you could have folded the aluminum one more time to use for pie shield . Finally it would be nice if you specified sweet or unsweetened coconut milk . I saw in you ingredient pic that it is unsweetened.

Have you ever tried fresh frozen coconut? It's really good. It's in the freezer section, usually by frozen pie crust. There is no sugar, just grated coconut.
I was making this as a thank you gift for a friend, had it all together and then I saw the egg mixture that was not included in your video! I followed your delayed instructions but it did not appear to be thick enough. If this does not set up I will be so MAD and will have to start from scratch!
That happened to me. I made this pie recipe two years ago, but I followed the website instructions and it came out perfect made it last year and followed the video and didn’t put the eggs in because I was following the video step-by-step and it was really runny. 😬
The only flavor I love more than coconut is BANANA. Your coconut cookies are excellent. I just would not toast the coconut as dark as you had. I like the chewiness of the coconut not as toasted.

I use Half and Half instead of milk oh how creaming and yummy it is. My family begs for my coconut cream pie all the time.

Three things, cling film works best for holding beans or whatever for blind baking. Secondly you could have folded the aluminum one more time to use for pie shield . Finally it would be nice if you specified sweet or unsweetened coconut milk . I saw in you ingredient pic that it is unsweetened.

Have you ever tried fresh frozen coconut? It's really good. It's in the freezer section, usually by frozen pie crust. There is no sugar, just grated coconut.

I was making this as a thank you gift for a friend, had it all together and then I saw the egg mixture that was not included in your video! I followed your delayed instructions but it did not appear to be thick enough. If this does not set up I will be so MAD and will have to start from scratch!
That happened to me. I made this pie recipe two years ago, but I followed the website instructions and it came out perfect made it last year and followed the video and didn’t put the eggs in because I was following the video step-by-step and it was really runny. 😬

The only flavor I love more than coconut is BANANA. Your coconut cookies are excellent. I just would not toast the coconut as dark as you had. I like the chewiness of the coconut not as toasted.
