Korean male who has been making Kalbi and bulgogi for over 20+ years, this is a good recipe. Won’t share all my tweaks but the basics are correct. Main difference is the amount of time you allow all the enzymes to work into the protein. Cheers.

For heat, why not gochujang or gochugaru?
I was thinking the same thing. I guess he's trying to make it more accessible, but gochugaru isn't hard to find.
what would you use for a substitution for the Korean pear?
A regular pear w/ half a kiwi or pineapple juice works as well if you cannot find Korean pears. Amounts vary depending on recipe

The korean pears have a special enzyme that tenderises the meat. The closest thing you can use that is easier to find would be kiwis
