How to make bulgogi to perfection! Also try serving it Seoul-style.

  • Bulgogi (Korean beef BBQ), 불고기, is easy to make at home with a few basic ingredients. The thinly sliced beef doesn’t take long to marinate and cook. This bulgogi recipe shows you everything you need to know about how to make authentic, delicious bulgogi! You can grill the meat over charcoal or wood charcoal (sootbul, 숯불). If pan-frying, you have two options I'm showing in this video. This video also shows you how to make highly popular Seoul-style bulgogi (서울식 불고기), which is how I used to eat bulgogi growing up. It’s also known as yetnal bulgogi (옛날불고기), meaning old-style or from the past, with nostalgic connotations.

    ►INGREDIENTS:
    2 pounds thinly-sliced beef
    2 to 3 scallions
    1/2 medium onion
    Marinade:
    6 tablespoons soy sauce
    3 tablespoons water
    2 tablespoons sugar 2 tablespoons honey ( or 2 more tablespoons sugar )
    2 tablespoons rice wine (or mirim or mirin)
    2 tablespoons sesame oil2 tablespoons minced garlic
    1/4 Korean/Asian pear
    1/8 teaspoon pepper
    To serve bulgogi Seoul-style
    3 ounces potato starch noodles (soaked in hot water for 20 minutes and drained)
    3 scallions
    2 ounces garlic chives (buchu) - optional
    1 pack enoki mushrooms (stems removed)
    2 cups dashima broth (or beef broth, anchovy broth, vegetable broth, etc.)
    1 teaspoon soy sauce (or to taste)

      Use Apple. For thin noodles, putting enoki not ideal. Fresh shitake slices or brown shimeiji is best

    I've used apple sauce instead of pear. It works wonderfully. I get the no sugar added kind. It doesn't take much. A few tablespoon

      @@koreanbapsang6835 it works really great. The enzymes in the Apple tenderize like the pair would and it gives the fruity sweetness without being overpowering. It's really good alternative for when you can't find pear especially the Korean ones. Sometimes I add a little extra soy sauce to counteract the sweet because I like my things a little

    Thank you for the easy to follow instructions, I've been using store bought bulgogi marinade but it burns easily when cooking, although good taste. I'll make this next time.

    In 2002 I met a few Koreans at college. They moved back to Busan now, but we spent a lot of time together, event shared an apartment for a year. I miss some of the food and music. Thank you for this recipe, it looks close to what Jeong-He made.
    Now I have to look for the Korean song I can’t find… Ne style…

    I used a bison chuck roast and apple instead of pear - still tasted great and was very tender with a 6 hour marinade!

    I was in Korea twice in the early 80's. Korean people treated me nice. I loved beef bulgogi at the NCO Club. On the economy, I enjoyed street vendor food. I've noticed that there are no longer street vendors when I watch recent videos today. That's a shame. Obviously capitalism has consumed the market. No more "little man or woman." Your food looks so good.❤❤❤❤

    When I tried Korean bulgogi in Chinhae Korea I ate it grilled at the table and it was served with a variety of leaves best bulgogi I’ve ever had was in Chinhae

    I use same ingredients except I add Korean Plum Extract (the good stuff, not the cheap one with corn syrup).

    Thank you for the beautiful recipe. I'm wondering when you put the marinaded bulgogi on to the holes of grill pan in the end, why the liquid doesn't drop directly down on stovetop, but drips towards the side ? It's so interesting

    The closest Oriental Food Market to me is very far and I don't always get in the area. Instead of using Korean/Asian pear, might I be able to use canned pear? I'm thinking Icould chop it up really well.

      You can blend it and use. Or simply use a bosc pear or apple.

    I've noticed in these videos you dont use mulyeot or corn syrup very often, is there any reason? I see you use honey for shininess but why not other syrups? Love your website and videos :) especially when you explain the why behind what you do and sharing your secrets!

    So how much kiwi should be used for 2lbs? Unfortunately Asian pear is not in season until September, so my Korean market doesn’t have it in stock. 🥺 I’ve made your recipe many times with Asian pear and I’m afraid of messing it up without it.

      When Korean pear is not available, I simply omit it or add some grated apple if I have it. Kiwi is a strong tenderizer, so use only a little (no more than a table spoon. If you have it, a couple of tablespoons of maesilcheong (Korean plum syrup) will be good too.

      Not common to add squid to beef bulgogi, but you can add some if you want. Not too much, or you'll need more seasoning.

      Beef bulgogi is made more commonly without ginger, but it's a matter of preference. Some people use it to reduce the beefy taste and for a stronger flavor.

      Yes they do, but Korean pear is a classic ingredient for beef bulgogi. Some people use apple or kiwi instead. Kiwi is a very strong tenderizing agent so use a small amount, or it will break down the meat too much.

    If you skip honey, how much sugar do you use??

      I say in the ingredient list in the description 2 more tablespoons sugar if not using honey. But, you can reduce it to 1 TB if you don't like it sweet.

      You can certainly add a little, but this type of bulgogi usually doesn't call for ginger.
