    Hi Gemma! I have never made royal icing. I appreciate you explaining everything in such a way that we feel we can accomplish this! Such a gift you give to us every week. I am ever so grateful . What a wonderful thing Gemma! It is a part of you, a giving part. I also wanted to say I am very excited because as I have said before I have a standing date with my niece Sevda to bake Christmas cookies, and now I can use the royal icing to decorate these cookies! I love that you showed us step by step and explained the consistency needed for cookies and for cakes. By the way I never knew that you could ice a cake with royal icing! This was very exciting for me. Sorry I know I sound like such a dweeb. Also, I really appreciate your letting us know that it's okay not to use all of the powdered sugar. This might sound really stupid, but I've always felt that if the person giving the recipe says use this much sugar I had to use that much sugar. Thank you, just for everything. I know this sounds like a sappy weird comment to make. But I really wanted you to know how much we all appreciate you. As a teacher, I also wanted to let you know that you are a fabulous teacher.     I grew up eating whole, raw eggs mixed with a little bit of soy sauce and hot, short-grain 🍚 rice. Yum! I was born and raised in Hawaii, and this was a common dish served at dinner. We never worried about eating raw eggs. But that was back in the day...many years ago. 😊

    FYI you can buy pasturized egg whites. I use the egg beaters brand but the cheaper brands works the same. I must say I have never use royal icing to Frost a cake because it gets so hard, but I have used it on cakes in small amounts like lil flowers, borders etc.

    In this video I'm a little confused that should I steam/ heat the egg white before beating? Can I use a hand mixture/ beater?

      Warming the eggs up is for ensuring the safety of the raw egg whites. But if you are confident in using good quality fresh eggs, this is a step you can skip. And yes you can use a hand mixer for this recipe

      Great question! The egg whites should just be warm and not hot. So OK to work with it in that state :)

    How long can Royal Icing hold up to? I’m requested to bake a wedding cake & I’m not near good but I’d love to give this a try! Will the icings hold on an outdoor event?

    Jemma I'm only like 11 and I find you recipes easy but when I don't have the ingredients I start worries and look for substitutes like for brownies instead of vanilla extract I use cinnamon and I put too much butter in so I took some out and it came out great

    Hi Gemma, does this royal icing gets hard hard on the cake? Or will it just crust a little. And if it hardens, how do i get it to stay soft(er) on my cake?

      It is thick like buttercream, but will harden and set over time. This one doesn't melt like buttercream :)

      It will. Though you need a cool dry environment for this to dry out. The powdered sugar in the recipe attracts the moisture in the air. You could decorate it then store in the fridge, uncovered. With the cool and dry environment of the fridge, it should form a ‘skin’. You also should store any leftover icing in the fridge, but the same way - the top covered with a plastic wrap so that it does not form a skin

    Have you done a recipe of the old school shortening icing with powdered sugar, I don't know the correct name. My Mom was a cake decorator for a University and retired but she always said it was the Wilton recipe that she altered. I always enjoyed that icing but I just don't see people make it anymore not that I don't enjoy the others, just love a childhood favorite :-)

      Oh Wonderful!!! I bet you do have a long list because I know people ask you a lot of questions because you teach baking in a non-complicated way and I've truly learned a lot. My youngest Nephew got so excited about making a Chocolate Mug cake he said "That's easy, I can make that" he did and he loved it.

    Actually, is this recipe s good substitute for whipped cream, for cake decorating with the same texture and softness? After couple of hours , is it gonna be still soft as whipped cream is?

      Hi Fatemeh, royal icing is best for cake decorating, as it can keep its shape for hours. Whipped cream is less stable compared to royal icing and will get soft after a few hours.

    Wow! I've only used royal icing for cookies. Does this set very hard like for cookies? Seems like it would be hard to eat on a cake.

      This would not set as hard as the one for cookies :) It will begin to set after one hour, forming a nice skin. After 4-6 hours, the icing will harden completely - holding whatever form you give it while decorating.
