TRADITIONAL PAALAPPAM (VELAYAPPAM)

Appams are easy to make at home. This is the traditional style Kerala style recipe. I have used a cast iron to make the appams, but you can use non-stick appachatti. Cast iron gives the lacy crispy appams compared to the non-stick ones.

but these becomes hard after few hours

There are two reasons of appam turning hard-
1. The batter may not be nicely fermented.
2. The yeast may be old or expired.
Hope this helps. Otherwise these appams remain soft for over 6 hours. (Use a casserole to keep the appams softer for longer time)
