When I do mine, I put the sausage in a 1 gallon ziploc bag. Press it out until spread out side to side and top to bottom. Then just cut the bag open along the seams and place on bacon weave

Wetting or spraying the board with water will help the saran wrap stick to the board. That will make the beginning of the process easier.

I’m 25 and I love your videos. It all started with Cowboy Coffee. Been watching Andy Griffith since I was about six.
This is phenomenal, kinda like the Bacon Bomb I make, the outside is exactly the same, just has potatoes (cubed and sautéed, cooled), cream cream cheese, onions, jalapeño peppers and seasoning inside… Now I have the breakfast version! I love sautéed bell peppers and onions, so I am going to try this, with my own twist! But this is phenomenal, and thank you for teaching everyone!

Have you tried baking parchment instead of plastic wrap? I find it far easier to work with than plastic wrap. Thanks Todd

We smoked10 lbs salmon today, then 4 trays of party mix after. Will have to try this soon. Love the idea of green chilies in the eggs idea. We didn't know about green chilies until seeing you about 7 years ago. Not something we ever heard of in Maine. What a treat!

Been making fatties for 15 years...never made a breakfast one. I have GOT to do this. I use parchment paper instead of the plastic. Makes life MUCH less complicated Mr. Rollins. Also...tighten up that basket weave. it makes it a wonderful presentation and NOBODY complains about the extra bacon.

@jamesbingham4538 it's time to make great flour tortillas big enough for your liking. I hear you about the size too. Romero's Gordita Tortillas are huge but may be a bit too small for this. Romero's is a kosher California brand in Southern California and not into political correctness. Great tasting tortillas that beat Mission & Guerrero brands.

That looks absolutely amazing! One thought. Skip or substitute the hash brown patties and you wind up with a ton of protein and very few carbs. Good breakfast for us diabetics.
We have done something similiar but a butterflied pork loin stuffed with sausage and bacon weave wrapped

I made a number of chubs a few years back, in a variety of flavors and ingredients, some bacon wrapped, mostly with beef as the ground meat.
It never occurred to me to make a breakfast variety--I'll be doing this soon! Think I might use canned corned beef hash in place of the spam.
