Honestly, I’m no chef, but I’m a bit surprised that Gordon was taken aback by the use of balsamic vinegar in a dessert. With the right balance and combination of flavors, it could totally work, as this clip clearly showed. My guess is that he pretended to be shocked for the ratings, as I’d be VERY surprised that someone with a palate as sophisticated as his wouldn’t have known that acid can accentuate certain flavors.
I prefer an English Trifle over an Italian one. I just can't imagine that without the beef with sauteed peas and onions, that it could taste that great.
Balsamic in Strawberries is an Italian Classic.... this is really not a "dangerous" choice. I've seen Lidia Bostianich do this more than once. Also sprinkles? Ok whatever.

The way Gordon goes back to the spoon and licks it clean while trying to hold back a big smile is perfect.
