    Made this tonight for dinner and it was perfect! The roast was medium rare, tender and juicy. The frozen Yorkshire Puddings re-heated perfectly, and I made roasted baby potatoes that finished when the beef was done resting. The gravy was spot on! A new experience for me and my better half, and one which we truly enjoyed.
    Thank you so much for teaching me to cook like my British ancestors. It’s always been a bit of a joke amongst Americans that British food is bland and tasteless, but I am discovering that it is very nuanced and quite tasty if done properly. I can hardly believe that my first attempt at making Yorkshire Puddings came out so well! Thank you for posting these excellent videos. You’re tops in my book!

    I made a roast beef today and did it this way, exactly. The result was the best roast that I have ever made. It was perfect. It was so juicy and perfectly done. The gravy was so yummy.
    I can't wait to try the Yorkshire pudding next time.

My Russian wife was feeling intimidated about cooking roast beef for Christmas and your simple guidance give her the confidence to make an attempt. Her result was a very successful. She was very appreciative of providing temperature and mass measurement in metric. Both my brother and my father raved about her skill with roast beef.     Used this video to cook my families Christmas dinner, it worked perfectly and we ate it with yorkshires, potatoes, roast potatoes and veg. Afterwards my wife said it had been the best Christmas dinner ever. I give this 10 out of 10, If you're doing a beef joint its the perfect guide!! 😇👍

    My roast is in the oven right now....I used my own rub (some seasoned salt, garlic powder, onion powder, black pepper) ...... I put the onions on the bottom, but after 1/2 hour I added cut-up potatoes, baby carrots, and more cut onions ( stirred up with olive oil and kosher salt) around the roast. I splashed a bit of red wine around the veggies.... I like my meat Medium, so I lowered the temp to 325 F and will roast another 30 - 60 min.......It smells heavenly ! Thank you for the inspiration !

    Another brilliant recipe John. Had a 1.2kg piece of Topside so proportioned the extra 15 mins for medium rare ( aka 9 mins etc ). Absolutely superb Roast. Slightly altered the gravy recipe to use a couple of spoons of Bisto Best Gravy Granules as the thickener and skipped the butter, beautiful flavour.

    I was thinking of such roast last week when I was at the butcher shop, I think it's now after this yummy video.     When I make my gravy (and I do mine almost like yours except instead of corn starch, I use granules) I test the thickness using the back of a spoon. If it coats the back of the spoon, it is at the perfect consistency

    Last weekend I cooked a 7.5 kg piece of beef following your method. Basically I stuck to the high beginning temperature and time, but lowered the main temperature a little and extended the time for weight. It was beef from a 4 year old bull rather than a steer so a neighbour suggested I add some fat as bull beef can be a bit dry. Your method worked a treat and it made for much less work than cooking some 35 steaks in a Barbecue situation. As we are in Australia I served it with Damper rather than Yorkshire; the kids like to clean up their plates and the pans with the Damper Bread. So not much washing up either. Thank you, I'll have a go at Yorkshire next time but maybe at a cooler time of year.

    😲 wow! I had to Google, what is a "joint of beef". Yikes, it's a baby brisket, rolled and tied. This is not a bad thing, just so different. "Brisket", we season and smoke for hours on end. BBQ. I've seen some killer Jewish recipes that are famous for they're tenderness, braised. This was so new, and exciting for me to see a new way! I have however, a 19lb brisket in my freezer. Will be 15-18 hours in the smoker. Yummy... The great thing about cooking is, to learn different parts of the world, and how they cook! It's a great thing. Thanks John, for this new recipe. 😁

    I made this for my first ever roast beef by myself and I’m addicted to it! I used golden and red potatoes instead of onions though just cause I’m not a onion guy and used soy sauce instead of the gravy just because of preference but the meat came out extremely juicy tender and delicious! I did make his gravy style too and it’s definitely good too btw. I just prefer the soy sauce for my dressing.

    I just did the conversions on the price of that roast. In US Dollars, it would be about $12.17 for the entire roast, which is about 4.2 pounds in the weight system we use. That makes it $2.90 per lb! Wow! That's so inexpensive compared to here in California. I can't find a 4lb roast for anything less than $20 unless it's an old cut that's been clearance priced for quick sale! (even then, it's usually only about 25% off the original price)

    Very similar to how I cook my roast beef, although I like mine cooked medium (I like steak medium-rare, but roast beef medium). I like to use the onions in the gravy as it imparts a lovely flavour. I also put a couple of gloves of garlic under the beef as well, and as long as you put it right under so the beef covers it, it won't burn. If the beef doesn't have much fat over it, I rub it in ghee!
    I like the idea of putting the bowl over the beef, I usually leave it to stand. Resting is so important.
    My philosophy is that there is no such thing as a bad cut of beef, it's how you cook it.

    John, I so want to make a good Sunday roast like my Mother did. So far I’ve failed. They are never as tender as what I remember. I don’t know if it’s the beef or the method. (Your cuts of beef have different names than in the US. I believe my Mother’s was “rump roast” which is not a pricey roast, but hers were so tender.)
    Anecdote: Yorkshire Pudding is not well-known here. Still isn’t. My parents were what would now be called “foodies.” They discovered Yorkshire Pudding in the 70s and it started a family problem. Mom loved the puddings. Dad loved buckets of the gravy. (We’d never heard of using oil as an option and I never heard the idea they could have saved up some beef fat or some other reasonable alternative. Wherever they learned to make YP dictated using up most of the meat drippings for it. LOL)
    So the pan drippings from the annual Christmas Dinner Prime Rib Roast were coveted by them both. I have to admit the pan juices make the BEST Yorkshire Pudding. But that rich, dark gravy was amazing, too.
    They had a good marriage. Odd years = gravy. Even years = Yorkshire Pudding. 🥰
    (As well, the annual Turkey Soup made from the Thanksgiving Day dinner turkey carcass was Odd years = Turkey Rice Soup. Even Years = Turkey Noodle Soup. I learned a lot about relationships in the kitchen.)
