Is keeping the perlite moist enough to mantain a low temperature in the chamber? I'm doing a school project about growing enoki and I don't know if it will be possible without some kind of venilation or refrigeration machine
Temperature depends on what species you're trying to grow. Most gourmet mushroom species will do well if kept between 15-21 degrees celcius. We have all the growing parameters for the species we provide on our website. Keep it out of direct sunlight - full shade or indoors is best. Some light helps the mushrooms to start pinning and for the fruit bodies to orientate themselves. An LED light on a day/night cycle would be adequate or natural light as long as it's indirect.

Thank you for the vud
What temperature do you try to keep it at? Is direct sunlight OK? Can they grow in dark places?
