I cooked this soup on sunday and it was SO GOOD! It was so simple and absolutely delicious! I cooked my noodles on the side, bc I knew I would eat the rest tonight after work and it was the right choice! Next time I'll do it again like that and pop the chicken in the oven, such a amazing technique Laura
no sweet you are not crazy in Germany they also come granolata on their chicken noodles soup granolata is parsley craze and lemon peel very finely chopped and I also squeeze fresh lemon over or get an ice cube of frozen lemon juice in my soup it cools it a bit and gives a wonderful taste I use both at once
I usually make a huge batch of broth and boil the entire, say 10 cups of broth, to 2 cups, then they harden in the fridge like jello and I freeze them in ice cubes try or tiny containers and use each with water whenever I need broth while cooking (of course after I remove the hardened fat). This method of oven cooking is interesting, I am definitely trying that one to see the difference, I usually caramelize my chicken pieces on the stove. Your broth looks very clear and clean!
Great stock. Agree, few herbs. I use a turnip other than parsnips, but both fine! And thanks for encouraging leaving onion skins on. A secret to colorful stock!
I'm happy to try the roast chicken - I usually buy a roast chicken to "save time" but you're right...its nice to have a low and slow time in the kitchen. I usually make tiny matzoh balls instead of noodles because I like the firmer texture. This will be fab, and I can't wait to try it!

I did not follow to a T because I did not have the time, WAS doing on a weekday because I’m pregnant and saw a picture of chicken noodle soup in the morning so I HAD to have chicken noodle soup lol. But I did roast the chicken first before boiling and yea it does give it more flavor! I simmered for a bit over an hour once chicken was cooked and it was delicious!

We Indonesians have a dish called 'soto ayam' which is pretty much like a chicken noodle soup (although there are plenty of variations of it) , and it is commonly served with lime wedges on the side, so you can squish one or two into your bowl if you want to :D

Delicious flavor! The chicken didn’t get dry after 3 hours of cooking! I was impressed 😮 However it was super tender and taking it out of the pot made it fall completely apart. And then even though I tried shredding it into bigger pieces once added to the pot again it shredded into very tiny pieces.
I just peel all my vegetables and put them in with the bones. Always use the outer skins of the onions and the celery tops. Then I add water and 2 tsp of apple cider vinegar and put in the instapot for 90 mins to 2 hours to get the bone broth. Then I sauté all the chopped vegetables in a pan and add to the broth and put the lid back on the instapot for 25 mins. I usually use rice instead of pasta because if it t swells it’s so small it doesn’t soak up everything.

So mrs. Vitale ,I made the soup today for the third time, and I have to tell you it gets better and better each time I make it, however one small problem, picking up the products I needed, I went to meat farms , out here in New York, and the only problem with that is they had" their bread" coming out fresh!!!! So I had to buy three,( like any honest good Italian boy would do:-) and I ate a full loaf with my three bowls of your soup:-) hahahahhahah blessings !!

I always like making my soups on weekends especially on Sunday when I'm already doing the sauce because I'm cooking other things and I can just let both of them sit together.
If you decide to leave the brown skin on your onions and have a Corian worktop, try not to spill the broth on it or cleanup will be painful, because onion skin stains badly.

This is how I do my chicken noodle and chicken dumpling soup. Sooooo gooooood!
My favourite chicken noodle soup is the one my aunt makes and serves at her restaurant but I need to try this!!! Looks amazing
