Ingredients:
- 1 lb (450g) minced beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 cup uncooked elbow macaroni minimum
- 1 cup shredded cheddar cheese minimum
- 2 tbsp chili powder - optional
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional, for extra heat)
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 cups of water
- Fresh cilantro or parsley for garnish (optional)

As a celiac, I've found I can often substitute rice for macaroni or pasta. Of course, not the same - - but the Mac isn't the star of the dish. The star is the delightful blend of flavors and textures. Thanks for another winner recipe 🙂

Before adding the pasta, divide into 4 parts. Cool then freeze 3 of the portions. Add 56 grams of macaroni to each portion when you defrost and reheat.
I freeze whatever I have left over and eat it when I don't feel like cooking on a particular night. Especially meals like this...I think they often taste better the 2nd time around.

I haven't eaten red meat in over 20 years but I still love my Chile or a good meatloaf. What I have found as a good alternative is bulk turkey breakfast sausage. This recipe sounds perfect for that.

I guess you have been sucked into the red meat is bad for you. Which is total nonsense derived from very dubious studies. Whereas red meat, especially steak, liver Etc is the best thing you can eat to get maximum nutrition. Turkey and chicken are way too low in fat. You need fat.

Chili mac is one of my favorite dishes. I have my own favorite recipe, but this looks like a good version. One of the great things about the dish is all the things that you can change in subtle ways without ruining it. I agree wholeheartedly that it's best if you don't season it heavily. (I have my days when I want a HOT chili, but not with chili mac.) For the novice, this is a great place to start -- and you might want to keep making it just like this without ever changing it! For the more adventurous, you can try adding or substituting beans (pinto, great northern complement the pasta well), light vs. dark red kidney beans for milder/stronger flavors, different types of tomatoes, more or less pasta, cooking and rinsing pasta before adding it at the end for less starch (and slightly fewer carbs), leading to a thinner sauce if that's your preference... Maybe even leave out the cheese. Maybe leave out the beef broth/bouillon for more of a tomato flavor (keeping in mind the water still necessary for cooking the rest of the ingredients). There's a lot one can do to switch it up, even if only once in a while just for fun, or maybe to accommodate particular preferences. Have fun and bon appetit!

This meal is a perfect cure to warm the innerds up and make our hearts feel happier with being stuck inside imagining all those fish waiting to be caught! Have seen this dish before. It's like a kitchen marriage of 2 favorite meals here. It always tastes better when reheated the next day, but hard to resist after the cooking is done.

An equally popular variation, especially during fair and circus carnival season is Chili Cheese Fries.
Cook and season your french fries as you prefer. Pile them on a plate, then top with a generous soup ladle or 2 of the chili and sprinkle grated Cheddar or Monterrey Jack on top.
This breaks the resolve of even the Perpetual Diet People. They come a-running!

Yeees …. Another one pot wonder, looks absolutely delicious Rik, it never occurred to me to serve up my chilli with elbow macaroni, so definitely will be try this recipe out. My wee secret ingredient that I like to add to my beef chilli is a tablespoon of caraway seeds & usually add some diced peppers to make it go a bit further. Found the stock cube trick out by accident when making something one time a good while back and I can highly recommend it. Works in odd stews for instance and I have even added a drop of Soy sauce for rich deep colour. What a great dish and so many hidden bonuses, part of the five a day, one pot to wash and pretty economical to boot as well as being so easy to make, a winner.

This looks like it might be my new favorite meal! I will try to find out how to make it in the instant pot. Thanks for sharing.
This will get you there: - Turn on the Instant Pot to the "Sauté" setting and add the olive oil.
- Add the minced beef and cook until browned, breaking it up with a spoon as it cooks.
- Add the chopped onion and cook until translucent, about 3-5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Stir in the diced tomatoes (with their juice), tomato paste, kidney beans, black beans, chili powder, ground cumin, paprika, cayenne pepper (if using), and a pinch of salt and pepper.
- Pour in the beef broth and stir to combine.
- Add the uncooked elbow macaroni and stir to ensure it's evenly distributed.
- Secure the lid on the Instant Pot and set the valve to the "Sealing" position.
- Select the "Manual" or "Pressure Cook" setting and set the cooking time to 5 minutes at high pressure.
- When the cooking time is complete, carefully do a quick release of the pressure by turning the valve to the "Venting" position.
- Once the pressure is fully released and the pin drops, open the lid.
- Stir in the shredded cheddar cheese until melted and well incorporated.
- Adjust seasoning with additional salt and pepper if needed.
- Serve the Beef and Bean Chili Mac in bowls, garnished with fresh cilantro or parsley if desired.
