I havent seen anyone talk about using the sundew in a cider. I decided to step out and try it myself. Got some sundew coming from Norther brewer tomorrow.
@@NorthernBrewerTV My sundew cider finally finished fermenting after 2 weeks. Stuff tastes amazing and will get better as it sits. It tastes almost like a tropical fruit punch. You can taste the apple but also get passion fruit, strawberries, pineapple and a flavor that tastes like melon. Such a great experiment and Ill be doing this again for sure. It also only finished to 1.005 so its a little sweet so no need to back sweeten.
Since witbiers have such a unique flavor profile, I think you'd be better off on using a more classic witbier strain. Of these two, I think Bananza would be better suited for it, but won't give you the phenols that the classic slightly spicy witbier style is know for. Does this help?
Brewing in summer heat there is no way to let it freerise this month. I'm brewing a heff next weekend and have bananza. Ready. I have a chiller to get the fermenter to 68. But to get the most banana flavor should I pitch at 68 and then set chiller to like 74-75 or just pitch at like 74? And keep fermenter with chiller at 74??
Awesome.......genetic engineering is opening up new doors for the craft beer industry........surely there are a lot of possibilities........like the red and green capsule offered by Neo in Matrix.......cheers
Thanks Northern Brewer for carrying these. I got my Bananaza and Sundew. Bananza is going in a light weizenbock grist and will then have moscavado raw sugar and a dash of vanilla, dark rum, and cinnamon added to make a Banana Fostersweizen. Excited to be able to replace the clove phenolics with the range of cinnamon phenolics!
Love at the end he says can't wait to see what's next and now we have cosmic punch. Omega is so awesome

Could you mix the two strains?
You're a homebrewer. You can do anything you want! Seriously though, why not? Might get some unique banana-berry type of flavors from a co-pitch.

Not sure why we didn't think of that. But we still have some of both in kegs. To the brew cave!

I’m going to try making a Munich Malt Mandarina Bavaria hop smash with Sundew yeast.
Oooooo! The orange-y melon flavors from the hops with that red berry and stone fruit of the yeast. Sounds like an epic fruit basket!
