  • gluten-free chocolate cake recipe that's one bowl only! dairy-free and can easily be made vegan! frosted with dairy-free chocolate buttercream and flaky sea salt.
    2 cups brown sugar
    1 cup cocoa
    1/2 cup oil
    2 eggs (or 1/3 cup water)
    1 cup dairy-free milk
    2 cups gf flour ( i use bobs 1 for 1)
    1 tsp salt
    1 1/2 tsp baking powder
    1 1/2 tsp baking soda
    1 tsp vanilla or espresso powder
    1 cup boiling water

    I made this cake yesterday (subbed in gluten all purpose flour, almond milk, and hot, strong coffee) with a coffee chocolate pudding-style icing and OMG! Amazing comments from everyone! Thank you so much for sharing :D

      @@LaurenMcGowan I know! Both at once it's craziness! I'm no baker so I just winged it off of an idea but, I prepped pudding as you would when making it from scratch, but using icing sugar (instead of granulated sugar), dark cocoa , decreased the cornstarch and added a few tablespoons of the strong coffee. I whipped all of the ingredients before in my stand-mixer on high for a few minutes just to get a bit of air (but probably could have skipped that step). I cooked it just below it's boiling/finish point so that it wouldn't be as puddingy as an endpoint. Then kept mixing it to cool and stop it from firming, and iced the cake while it was still warm. I did more of a "tomboy" style with just a nice thick layer in the middle and on top. I love the pudding taste and richness in the middle of the layers, esp with some Maldon salt! I hope this makes some sort of sense with my no measuring free-style vibe haha. I also think a belgian style semi-sweet chocolate egg-based mousse as icing for this cake would go crazy!

    Hey Lauren! Thank you so much for this recipe!! It's been delicious but I am having a hard time getting the texture right: my cakes don't rise (and stay raised) and the inside is often close to raw :( What am I doing wrong??
