    Magellan was not killed in Mindanao. He was killed in Mactan, Cebu and Cebu is one of the Visayas Provinces. Although, Spaniards still colonize the entire country. We adopt some of their culture, with the words we are still using today, in terms food, religion, norms, traits and even our last names.

    So thankful that the daughter did not embarrass herself, considering she comes the younger generation. Hence not embarrassing the Filipino lol. She does have a lot of knowledge about Philippine history, geography, food, traditions etc. Even familiar with Betamax, Adidas etc (oh , isn’t there also skewered BBQ called IUD lol YES! the contraceptive device lol) Sorry to say, but she, actually , would’ve done a better job in describing the food accurately.
    David is so adventurous, you can see he really appreciated the food. But to be fair, they all look so delicious that it’s making me miss and crave all that was laid on the table.

      Filipinos were not Muslims before they became Catholics. Some Southern Philippine tribes in Mindanao converted to Islam but a lot remained as they are today preserving their own tribal identity, cuisine wise.

    We do have spices, but it's mainly optional... we serve them on the side, in our dipping sauces and condiments, like spiced vinegar and chili oils.

    Lapu-Lapu is not a Muslim, he didn't converted to the faith of Islam, he was practicing an "animous" religion and is very connected to the nature. He was the "datu" a larger tribal leader in the island of what is now "Mactan".     There are Filipinos that are part Chinese as well. My grandfather came from the Fookien Province. It’s ok to refer to some of us as Chinitos/Chinitas as i am sometimes referred to as and not offended by it.

    With all due respect, that lechon's crust is not properly done. I bet it's still good though, because he used Cebuano seasoning.
    But roasting is a whole art in of itself. It takes a real lechonero to get the perfectly smooth, juicy and crunchy skin.

      It was cooked in the oven that's why, the traditional smooth redish skin of Cebu lechon is cooked in charcoal.

    the cheapest is $1,000.00 a month not two hundred, I am originally from the Philippines but have lived in the States for 40 years two hundred might be living in a nipa hut and eating fish and rice I wish you would have another restaurant in the future in Charleston South Carolina is also a big Filipino community!
