Ingredients For Almond Chicken - serves 4 to 5
500 gm/1.1 lb boneless skinless chicken thighs
12 gm/ 0.4 oz/4 large garlic cloves
30 gm/1 oz ginger
200 gm/ 7 oz/ 1 large onion
55 gm/ 2 oz / 1/3rd cup almonds
1 teaspoon shahi jeera (black cumin) or regular cumin seeds
1 dry bay leaf
1 black cardamom (optional)
5 green cardamoms
5 cloves
2 inch length cinnamon stick
1 tsp kashmiri red chilli powder
1/2 tsp dry fenugreek leaves (kasoori methi)
1 tsp salt
1 tsp sugar
1 tablespoon ghee
3 to 4 red/green chilli
1 cup slightly warm milk
60 gm/ 2 oz/ 3 tablespoons thick Greek yogurt
2 tablespoons oil
Serve with rice/pulao/naan/paratha

M'am namaskar !! A really good dish with very subtle flavours. Since we are using almond cream and milk, my humble suggestion would be to grate a touch of nutmeg at the very end. This will a great spice to add .. in my humble opinion. I would love your views on this. Thank you very much.
About the almond skins - it is always good to remove them as almonds do carry a tinee weenie bit of cyanide in them. The cyanide is in the skins. The soaking in the warm water leeches out the unwanted stuff. Some residue in the skin can be peeled away. This reduces the allergies that might occur as well.
Nomoshkar 🙏🏾. Adding nutmeg or mace is a very good suggestion. In fact I thought of adding it but completely forgot at the end. I did soak the almonds in very hot water for an hour. Thanks for those tips.

You can use a fourth of a teaspoon of ground nutmeg or mace. Add it right at the end to retain the flavor.

😀. Yes sometimes there is a risk of the seeds landing on your skin
They can burst, and trust me, you do not want chilli seeds and hot oil in your eyes. If you re worried about the chillies bursting. make a few pin pricks in them before frying, and as Bumbi says, keep the heat low.

Yes, a very good curry… As Mrs B don’t like ‘em too hot, I stuck with just 1 tsp Kashmiri red chilli powder. Also added the perfunctory 1tsp Garam Masala… As with all curries & stew-type dishes, it’s tastier the following day.

Yes, absolutely you can use almond milk.
Bumbi do you think bay leaves make much difference? I can’t see that they do. I’ve even made a tea with them to try and detect a taste but couldn’t. Love your channel X
Have you used Indian bayleaves? The ones sold at Indian grocery stores are different than the ones sold at regular grocery stores here in USA. The ones from India are larger with 3 distinct veins running longitudinally along the leaf and they add a distinct flavor to a dish.
I'll be trying this soon. I love anything with almonds. Is it best that the milk be slightly warm, or is room temp okay?

I cook a lot of your recipes and really enjoy eating them. Your instructions are very good but this one I was unsure of what to do with bay leaf after boiling I removed as said but wasn’t sure if you were meant to add to onion blend ? So just put in with black cumin so as not to waste
You discard it after boiling. The onions will take up all the flavor from the bayleaf but if you do not want to go to waste, what you can do is instead of adding in water along with the onions you can add a dry bay leaf along with shahi jeera . Hope this helps

Yes you can but the onion smell sometimes overpowers this delicate dish

At 5:01 - can I ask what is the purpose of boiling the onions and spices and by doing so how will it enhance the flavours? Thanks.
Boiling the onions mellows them down and that is so important for this delicate gravy. The spices get softened on being boiled and it is easier to make a fine smooth paste along with the onions. At the same time the onions get fragrant when boiled with the spices so you are not losing anything

I have a question. When you just put the whole fresh Chili’s in, is the spicy heat less intense than if you had chopped up the Chili’s and added them? I’m learning how to prepare Indian food as I love it, but my family doesn’t like it really spicy. Thanks.
If you want the dish to be less spicy add the chillies whole. Adding chopped chillies will make it very spicy. At the same time use less number of chillies than the stated proportion to start with. In that way you will have more control over the heat

great recipe. but why do we need so much milk..
You can also use cooking cream but I find milk to be healthier and more mellow in this dish. You need a creamy gravy which can be attained like this.

I have to try this! When I first soak and then boil/simmer the almonds for five minutes I can squeeze of their skin much easier and quicker. (No offence.)
