Perfect Buttermilk Pancakes | Emeril Lagasse

- Perfect pancakes are not hard to make! Just make sure you have buttermilk and a whisk, Emeril's essential tools for making this easy brunch favorite.
PERFECT BUTTERMILK PANCAKES
SERVES 4
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
½ teaspoon baking soda
Pinch salt
1 ¼ cups buttermilk
1 large egg
2 tablespoons melted butter, plus more for griddle
2 tablespoons finely grated lemon zest, plus additional for serving
1 pint blueberries, washed and patted dry
Room temperature butter, for serving
Maple syrup or orange blossom honey, for serving
Thinly sliced lemon, for serving
In a small bowl, whisk together flour, sugar, baking powder, baking soda and salt. In a medium bowl, whisk buttermilk, egg, and melted butter until thoroughly combined. Add dry ingredients to the buttermilk mixture and whisk until just combined; batter may still have a few lumps. Fold in the lemon zest and allow the batter to sit for 10 to 30 minutes or up to overnight.
Lightly butter griddle and heat over medium-low heat. Working in batches, pour ¼ cup batter onto hot griddle for each pancake (you can cook 2 to 3 pancakes at a time on the griddle). Place about 2 scant tablespoons blueberries on top of each pancake and cook until the batter bubbles and is golden brown around the edges, about 2 to 3 minutes. Flip pancakes and continue to cook for about 1 minute longer. Transfer pancakes to a warmed platter or baking sheet and keep warm while you repeat the above process with the remaining batter and blueberries. Serve the pancakes hot, with butter, any remaining blueberries, syrup or honey, and lemon slices.

Maybe it’s the low humidity, I don’t know but the absolute best pancakes I ever eat come from Las Vegas. Every single place in the whole city they are fantastic.

I think that there is no need to judge Emeril. I think that because we all have different opinions about food. Emeril likes it a pancake that is not fully done. You may like a pancake that is fully done. I like fully done pancakes too. If you don’t like undercooked pancakes, simply cook the pancakes a little longer. A few tweaks are always necessary when making food. Emeril does not need to be judged.

Thin your batter and use a low to high pour. If done right the pancakes will have a round shape and have what is called a string of pearls on the obverse and concentric rings on the presentation side.
Either the griddle is too hot or the batter a tad too thick or both. It's a mistake I've made before, especially when in a hurry and neglected to adjust the heat properly and/or the amount of liquid in the batter before ladling. I like Emeril so I'll let this one go as a bad experience that happens to all of us. Try blueberry or mixed berry syrup on these....soooo good.

Ok, I don’t think this is quite his specialty. The griddle temp was spot on (medium low-keeps them golden, not brown or dark brown, while the batter cooks), but he must have hit the knob or something, because the pancakes were burning on the outside and still raw in the middle. I love that he kept says “Light & Fluffy!” “Light & Fluffy!”
Guess you need to get famous and show us how it's done, in that case.

Emeril learned this recipe from me been making pancakes like this for many years. Only problem Emeril was always in a hurry and left them a little undone. Guess he was just always hungry.
He should of flattened them and turned the griddle down. He's still a great cook.

You never flatten or press down like that. Leave the batter as is.
American pancakes are a delicious alternative, especially because they're so much more fluffy. His finishing gobs of butter are a bit of a turn off though. Butter = fat = flavour; however, too much butter = squirty bum.

Curious as to your whisking to get all the lumps out. This is normally a cardinal sin when making pancakes, because it makes the pancakes tough. Unless you're using very low protein flour.
Whisking too much makes gluten - this is why pancakes get chewy. But note his pancake batter is rather thin.
Really sloppy work. Barely no measurements and he overbeats the batter causing more gluten to form. Also, I hate when people simply put a hard square of butter on just one or two pancakes. The idea is to spread soft butter over all the pancakes so it seeps into the pancake, not just sits on top of one unmelted.
ALL UNDERCOOKED. Disappointed.

I don’t think anyone was being unfair. The pancakes are objectively underdone. Pretty clear to see that there was still wet batter on the edge when he was playing them. It’s irrelevant that he used to have a cooking show. This video was sloppy cooking.

My problem with pancakes, they don't get stable enough to flip until they're starting to get black on one side
try using a lower heat
I always use a griddle, set it to 350 and when they start to bubble, they you can flip them
Bone up, don't be afraid to flip... use clarified butter and don't add too much sugar to the batter.
Your griddle is too hot. Turn it down a bit or sprinkle water on it and if it bubbles and dances then its ready :)

Raw on the inside and blueberries are sweeter after they’ve exploded inside the pancake. Emetic is a great chef, but he obviously doesn’t cook and eat many pancakes.

He beat the mixture too much. Overdevelops the gluten. Just whisk it together, don't beat it. Don't worry about lumps. Also don't flip'em until the edges look dry. That way they won't be raw in the middle, like his looked!
