Hey Natalie, after sweating the garlic in the olive oil, add half the chili flakes and let them bloom. For more umph, get a tube of organic tomato paste and add maybe a tablespoon of it to the oil+garlic+chili mixture. Heat until some fond/caramelization starts happening. Then de-glaze the bottom of the pot with fresh water or just the juice of the canned tomatoes........ or if you happen to have a bottle of good wine that's already open, use some of it to de-glaze the pot, then pour in the other liquids. If you have some pre-made vegetable stock with some herbs, those would even be better. Here's an optional tip to thicken it: get an immersion blender (stainless steel, preferably........ so it won't melt in the pot). Blend some of the stew, in the same pot, particularly the chickpeas. Alternatively, you could also add some sliced okra.
This looks so good! I personally like to go lighter in spices and all the ones she used are my favorites. Anybody complaining that it’s bland can add whatever spices they like to make it their own. Sometimes it’s great to just have an easy base recipe so you can play around with flavor.
This is literally my number 1 go to dish.. The most comfortable for me to cook.. I wish I could learn more recipes from her. She's one of my top 5 favorite actress of all time.
i like how she didn’t over cook the zucchini and i GET that this is her special recipe she cooks for her family BUT if you’d like to have a more FLAVORFUL dish, i’d suggest sautéing some diced onion and fennel with the garlic then adding some other spices like cumin, ground coriander black pepper, smoked paprika and ground up fennel seeds are all great options! Adding herbs is also a nice way to keep it flavorful, like cilantro tarragon, basil, oregano or even mint! Zucchini and butternut squash is such a beautiful combination and adding a hint of natural sweetness never hurt anyone! Corn might be nice as well! Some acid would really brighten it up so a squeeze of lime or vinegar would be divine! To keep it vegan, topping it with something crunchy like fried garlic, nutritional yeast, toasted nuts or chips wouldn’t be a bad idea! Food is about flavour and texture. Love her though. All of these extra steps don’t take a whole lot of extra prep to create something really special and tasty!

There was no acid in the dish besides the tomato, which is not that noticeable, no real heat besides chili flake which was put in at the end so it doesn’t incorporate like if you’d let it bloom, no tang from a dash of something like sherry vinegar or the like, no sweetness from carrot or some gently cooked garlic (confit preferably)... that’s all

I tried doing a vegetarian diet for a few months. Although I did lose a lot of weight (which was the intended goal), I also developed painful blisters in my mouth and on my tongue, possibly from lack of nutrition I would normally get from eating meat. So, needless to say, I went back to a regular diet with chicken and fish.
The dish looks to be ratatouille inspired, since they have similar ingredient lists. Looks good. It’s not going to keep me from eating meat, but it might inspire me to eat more vegetables.

My biggest problem with this recipe isn't the lack of spices, but the fact that she puts in garlic first,and then the zucchini - doesn't the garlic burn faster than the zucchini can cook? That said, I make a slightly adapted version of this quite regularly and it's really delish

+pmodd Pretty much all of what you say is true. I'm just not quite sure about the crop plantation argument. Haven't really read too much about farm animal feeding, but it looks like on average a single dairy cow eats about 80-100 lbs of hay a day. That's between 30 000 - 36 000 lbs of hay a year for a single cow and there's over a billion cows in dairy and meat farms all around. Chickens are around 20 billion and pigs - 2 billion. This leads me to presume crop plantation for meeting farm animals' eating habits is severe.
Add 1 Tbsp Cumin to garlic and zucchini at the end of their cooking and fry the spices in the oil quickly before adding tomatoes. Also adding a can of fire roasted Diced Tomatoes will help with texture.
America's test kitchen studied Canned vs. Dried beans and found that canned are always better because the quality it more consistent. Dried beans can vary greatly because of how long they sit on the grocery store shelves, and then in your pantry drying out, which effects how well they cook up. Chick peas, garbanzo beans, can be a migraine trigger though. Which really sucks when you're vegetarian. Other beans, legumes can be substituted but it's not the same.
She's definitely not a cook (there's barely any flavor development in this dish), but I can imagine how these ingredients could be turned into a tasty dish.

I've been wanting to eat healthier,and this is a great recipe,I think I'll try it..I'm not sure about becoming vegan,but I have been a vegetarian for a few years now and it's made a difference in my overall health...I'm still not eating that well,I still eat some junk food(not like I used to though) but I am trying to make changes that are gradual...like for instance I stopped drinking dairy milk and lost 5 pounds just by doing that..and I'm going to start doing yoga,because I have rheumatoid arthritis and it would be good to get back to the flexibility I had years ago..I am what they call "hyper mobile",they used to call it "double jointed" and I was very flexible and I want to get back some of that flexibility,which would really help with my RA...and I love Natalie Portman,she's a great actor :)
I would guess steady energy is likely because of less sugar in the diet. Maybe because there are many products with both sugar and dairy in. I'm veggy and noticed this but when I tried to cut out sugar rather than dairy.

It looks nice enough. What's she basically making is a tomato sauce (where the zucchini's moisture stops the garlic from burning in the place of diced onion) with some extras in it. My only thoughts would be add more water, cook for about double the time you did, and maybe add some soft leaves at the end. Like parsley. It is a stew, ideally your vegetables will be soft and coated in thick sauce. Again, my thoughts.
Probably one of the most unimaginative and plain things one could cook. My guess is that she hardly every cooks. There is a huge amount of salt and no creativity with the use of herbs or spices. That garlic needs sweating in the pan as do the courgettes(zucchini). It's the sort of thing a student would cook. The volume of salt in that would have probably made it rather disgusting.
Who cares? Have you tried making it? I guess not because it actually tastes good and it’s so SO easy to make! What’s more, it’s super healthy. Who even have time to spend hours on so called gourmet meals? P.s. U don’t have to use that much salt if u don’t want to🙃
The idea of changing your diet to incorporate vegan elements rather than going full vegan is great. Even though I eat meat, fish, dairy and eggs I could totally try and gradually shift to a vegetarian/vegan diet some days a week, or one meal a day. I think it’d still help the planet, somehow, and it’s way more feasible for me. It’s great advice. I love Natalie so much.

everyone talking about how this dish needs spice, she states its an easy staple dish for when she needs to feed the fam and be out the kitchen quick. shes a working mom, and realistically probably has a couple fav spice blends she throws in at home (hopefully)
as someone familiar with high level nutrition, it would have made more sense if she mentioned some zucchinis are much more healthier than others. Some varieties are more meatier texture than others, hence more filling and satisfying.
No paprika, no cayenne/fresh peppers, no black pepper whole or crushed, no coriander or Bouillon, no slap ya mama or any other seasoning mix???? This just makes me think or reiterates that even I as young teen or young adult can cook to a better extent it could atleast come up wih better recipes than most of these stand in’s for videos. This actually reminds me of a dish I always ate growing up made of veggies from our summer garden. Tomatoes, zucchini, eggplant, onion, and corn. If the veggies have good flavor, it tastes amazing. We did season with black pepper though lol!
I actually like the fact there is no curry in it, sometimes I need to take a break from spicy dishes and have something with just a taste of the ingredients themselves + I add black pepper so it is not completely bland....Asian spices are nice, especially if cooking easy on budget meals, but a girl needs some variation 😁 with that said, I personally think she never cooks at home and this recipe was quickly created by the munchies crew to fit her vegan profile and easy at the same time so she does not look completely amateurish stirring that dish

That is so amazing. I read that same book back in highschool and became a vegetarian after that. Been a vegetarian for a good 6-7 years. I want to become vegan one day and try very hard to stay away from animal products.

If you want to take shitloads of supplement drugs, have massive medical issues ~15 years after you start and look like a walking skeleton, then Veganism is the diet for you. Just be sure to remember the rhetoric every time you go to the supermarket:
- Cheese from free-roaming cows is evil
- Unfertilised eggs from free-range chickens is evil
- Goat's milk from goats wandering on hills is evil
- Crushing rodents with crop harvesting machinery is ok, because rodents aren't animals and you're only eating the vegetables anyway
- Killing boars to protect crops is ok, because boars aren't animals and you aren't actually eating the boars
- Animals that die from deforestation resulting from crop plantation isn't your problem, because vegans need the vegetables more than the animals. If there aren't any vegans, who will save the animals that die in order for the vegans to get their vegetables?
TLDR; Veganism is the biggest load of bullshit in the food industry, second only to the grapefruit diet. The diet is founded on an illogical ideology, as thousands upon thousands of animals die in the process of farming crops, and the animals we farm are primarily fed the crop waste that humans cannot eat. Irrespective of whether you're a vegan or an omnivore, many animals die in order for you to eat, so why choose a diet with inferior nutritional content which relies on drugs/pills in order to fill in the nutritional blanks.
Anyway, don't take my word for it, go vegan and suffer in 10 years. I love to see hipsters suffer poor health.

Haven't really read too much about farm animal feeding, but it looks like on average a single dairy cow eats about 80-100 lbs of hay a day. That's between 30 000 - 36 000 lbs of hay a year for a single cow and there's over a billion cows in dairy and meat farms all around. Chickens are around 20 billion and pigs - 2 billion. This leads me to presume crop plantation for meeting farm animals' eating habits is severe.
She has been majestic since I watched her in the film Heat. Back then she was just an itty bit but very sweet.

Add 1 Tbsp Cumin to garlic and zucchini at the end of their cooking and fry the spices in the oil quickly before adding tomatoes. Also adding a can of fire roasted Diced Tomatoes will help with texture.
This would be good, just needs more herbs and spices.
America's test kitchen studied Canned vs. Dried beans and found that canned are always better because the quality it more consistent. Dried beans can vary greatly because of how long they sit on the grocery store shelves, and then in your pantry drying out, which effects how well they cook up. Chick peas, garbanzo beans, can be a migraine trigger though. Which really sucks when you're vegetarian. Other beans, legumes can be substituted but it's not the same.
She's definitely not a cook (there's barely any flavor development in this dish), but I can imagine how these ingredients could be turned into a tasty dish.

I've been wanting to eat healthier,and this is a great recipe,I think I'll try it..I'm not sure about becoming vegan,but I have been a vegetarian for a few years now and it's made a difference in my overall health...I'm still not eating that well,I still eat some junk food(not like I used to though) but I am trying to make changes that are gradual...like for instance I stopped drinking dairy milk and lost 5 pounds just by doing that..and I'm going to start doing yoga,because I have rheumatoid arthritis and it would be good to get back to the flexibility I had years ago..I am what they call "hyper mobile",they used to call it "double jointed" and I was very flexible and I want to get back some of that flexibility,which would really help with my RA...and I love Natalie Portman,she's a great actor :)

I would guess steady energy is likely because of less sugar in the diet. Maybe because there are many products with both sugar and dairy in. I'm veggy and noticed this but when I tried to cut out sugar rather than dairy.

It looks nice enough. What's she basically making is a tomato sauce (where the zucchini's moisture stops the garlic from burning in the place of diced onion) with some extras in it. My only thoughts would be add more water, cook for about double the time you did, and maybe add some soft leaves at the end. Like parsley. It is a stew, ideally your vegetables will be soft and coated in thick sauce.
Again, my thoughts.
Probably one of the most unimaginative and plain things one could cook.
My guess is that she hardly every cooks.
There is a huge amount of salt and no creativity with the use of herbs or spices.
That garlic needs sweating in the pan as do the courgettes(zucchini).
It's the sort of thing a student would cook.
The volume of salt in that would have probably made it rather disgusting.

The idea of changing your diet to incorporate vegan elements rather than going full vegan is great. Even though I eat meat, fish, dairy and eggs I could totally try and gradually shift to a vegetarian/vegan diet some days a week, or one meal a day. I think it’d still help the planet, somehow, and it’s way more feasible for me. It’s great advice. I love Natalie so much.

I make this with baby kale. My son will only eat kale if it's baby kale & made this way or raw in a strawberry salad with avocado dressing.

everyone talking about how this dish needs spice, she states its an easy staple dish for when she needs to feed the fam and be out the kitchen quick. shes a working mom, and realistically probably has a couple fav spice blends she throws in at home (hopefully)

as someone familiar with high level nutrition, it would have made more sense if she mentioned some zucchinis are much more healthier than others. Some varieties are more meatier texture than others, hence more filling and satisfying.

No paprika, no cayenne/fresh peppers, no black pepper whole or crushed, no coriander or Bouillon, no slap ya mama or any other seasoning mix???? This just makes me think or reiterates that even I as young teen or young adult can cook to a better extent it could atleast come up wih better recipes than most of these stand in’s for videos. May not be a good video performer for the camera but if the recipe is better than the actor I can deal with that compared to having someone noteworthy and a less than stellar dish..

This actually reminds me of a dish I always ate growing up made of veggies from our summer garden. Tomatoes, zucchini, eggplant, onion, and corn. If the veggies have good flavor, it tastes amazing. We did season with black pepper though lol!

Dante yes, and from a nation that has many variations of a chickpea stew, this was beyond abysmal. Sorry if that offends you, it’s just my opinion.
I actually like the fact there is no curry in it, sometimes I need to take a break from spicy dishes and have something with just a taste of the ingredients themselves + I add black pepper so it is not completely bland....Asian spices are nice, especially if cooking easy on budget meals, but a girl needs some variation 😁 with that said, I personally think she never cooks at home and this recipe was quickly created by the munchies crew to fit her vegan profile and easy at the same time so she does not look completely amateurish stirring that dish
