Breakfast Taco - The Best Breakfast Taco is a Breakfast Brisket Taco

  • Breakfast Taco's come in all kinds of different flavors. The best Breakfast Taco is a Breakfast Brisket Taco. It is a also a great way to use leftover brisket. The combination of Smoked Brisket with the bacon Egg that has been fried in pork fat and the spice of the fresh tomatillo Salsa is absolutely FANTASTIC - Your going to love it if you love those ingredients!
    To make the Best Breakfast taco you will need just a couple of items.
    Leftover Brisket
    One Egg Fried in Pork Fat
    Bacon
    Tomatillo Salsa
    1 lb Tomatillos
    2 Garlic Cloves
    1/4 White Onion
    3-5 Serrano Peppers depending on how hot you like it
    1 tsp Kosher Salt
    Cilantro
    Roast off veggies then smash in a molcajete
    Corn or Flour tortilla
    Combine all ingredients into tortilla and enjoy!

    In Texas Most people wont eat at a BBQ/smoke house unless they do serve the day before leftovers for breakfast tacos and burritos (Mostly Brisket). Reason being is that if they dont sell breakfast tacos they are serving Day or 2 day old meats to customers. I always ask if they serve breakfast Tacos...and if they say "no"...I dont eat there for Smoked BBQ

    Wow those looked amazing! if I ever have any brisket left over I will give this a try! love the joint video with James! It was really great editing. seemed to transition between the two videos so fluidly it's like the camera just switched points of view! bug thumbs up

      it was fun working together on it! We planned for one more spot with James during the taste test but I forgot say my part. I got rushed because the rain was coming and we had no other room to shoot it. whoops! Thanks for watching!

    Jason, "live fire cooking" is the way to go, huh? I need to make authentic tomatillo sauce like James! I ought to learn how to cook eggs in pork fat, right? Your brisket taco looks off the flavor charts and right through the roof!!! I've got a lot to learn, but food this good is worth it! Great job!

    Ha! When I was a kid, my Mom and my grandmother always had a coffee can of bacon grease in the fridge. Why? Because everything fries better in it. And since my Mom didn't raise no dummy, there is a jar of bacon grease in my fridge as I type.
    And even more interesting, my Dad always basted the eggs with the bacon fat as he fried them. There are some old traditions that still can't be beat. That is THE way to fry an egg!
    The tomatillo salsa looks incredible, and the tacos look like they're best eaten nekkid in a washtub, so you can hose yourself down when you're done. Great stuff, Jason!

      Thats hilarious Moosie. My aunt didi the same thing...I still have memories of her using it. Agree some traditions will just stand up to the test of time wont they? haha The salsa was incredible James knocked that one out of the park!
