    For anyone watching this who has never tried the food it is as amazing as it looks. Super lucky to live 3 minutes from his food truck and LOVE the food here. I can honestly say it's worth visiting if you're in Austin.

    I grew up in San Antonio and was around my dad's barbeque pit so much I joke it smoked my soul. Now living in NC and the people are friendly, weathers nice but this video makes me incredibly homesick. I wish all these restaurants and their owners the very best and hope they make it through all this.

    These guys are legit. As a hispanic who also works in the industry, this video really hits close to home. "48 hours of prep time, to make something that'll be eaten in 3 min" really resonated.     I finally tried their barbacoa (sundays only) and man it was the most delicious thing ever. I've been all over Mexico and being from South Texas, we love our barbacoa on weekend mornings. 10/10. His twist on Mexican and texan food is top notch

    I met Aaron Franklin the first time I went to his restaurant. He told me I had to check out Valentina’s and that was the best bbq tip I’ve ever received. I’ve eaten bbq all over the county, but Valentina’s has a the one I’m obsessed with. So good and a must try.

    I remember last year at ACL he posted on Instagram asking his fan to get the attention of Chino (The lead singer of Deftones). As the day went on he somehow got to go back stage and serve them his BBQ. Watching the whole thing unfold was so amazing and showed how bbq really brings people together.

    I had the pleasure of meeting Miguel when I was in Austin in February with a few other BBQ TH-camrs on a bbq crawl and man, not only is he just as laid back in person the food... damn... the food is damn good. This is definitely a spot I'll be back to visit next time I am back in Austin.

    I'm just going to say this, based on what I'm seeing here this man has met or surpassed the highest levels of BBQ tradition and technique set by Franklin and others. His knowledge has reached the same level of insane attention to detail. The direction of the logs, the type of wood.. the mix of green and dried sticks.. the rub, bark.. everything is done with a complete disregard for time/resources consumed, but meticulous, overwhelming attention is paid to the process and end result. The work of a master.

    Lucky I grew up the same way in California. That style comes from Chihuahua Mexico home of the flower tortilla. My mother was born in Chihuahua, Ojinaga and was the queen of tortillas de harina.

    Dude Eater...this is intense!! The Holy Grail if i must say so out of my own admission. Could feel the heritage and culture speak through his ethos and work ethic. Thanks for enlightening us with this man's deep seated love and intrinsic dedication to the craft. The moment he gave away most of his recipes i knew he's a true chef and pitmaster. True chefs dont hold back, they impart the best they can. This guy is sure to leave a legacy behind! Big ups on this mint stuff by Eater...we need more honest and soulful ones like these. This is not some mechanical engineering...it is art..both by the man himself and Eater!! Props!!

    This is one of the most unique pit master eps I've seen. You never hear about this kind of food, ever.

      sven van lots of German settlers in Texas. You can stop by New Braunfels and see some of the old world German influence still around. They have the largest Oktoberfest celebration in the US there.

    I grew up north of San Antonio, in New Braunfels. That’s the taste I grew up with every holiday my uncles would barbecue for 24 hours straight. All these flavors take me back... I’m now doing ribeyes and New York strips on the pit. Also cooking these stove top with garlic, butter and rosemary. I’ve really moved up in the world but miss the flavor this guys using.
