Soft and fluffy Cinnamon Rolls / Cinnamon Rolls Brulée

  • Cinnamon rolls
    Ingredients
    Dough:
    1 cup warm milk
    2 1/2 teaspoons yeast (1 packet)
    1 Tbsp white sugar
    2 eggs, room temperature
    1/3 cup butter, softened
    1/4 cup sugar
    2 cups all purpose flour
    2 cups bread flour
    1 teaspoon salt
    Cinnamon sugar filling:
    1/2 cup unsalted butter, softened
    1 cup brown sugar
    2 1/2 tbsp ground cinnamon
    Cream Cheese Frosting:
    1 (8ounce) package cream cheese, softened
    1/2 cup butter, softened
    1/2 cup white sugar
    1 teaspoon vanilla extract
    1/4 cup heavy cream
    Make the Dough:
    In a small bowl, combine warm milk, 1 Tbsp sugar and yeast. Let sit for 5-10 minutes until foamy.
    In a large mixing bowl, pour in the yeast mixture, sugar, softened butter, eggs, flour and salt.
    Mix until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
    Place the dough in a greased bowl, Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
    Prepare the Filling:
    In a small bowl, mix together the brown sugar and cinnamon.
    Once the dough has risen, roll it out on a floured surface into a rectangle, about 1/4 inch thick.
    Spread the softened butter evenly over the dough. Then, generously spread the cinnamon sugar mixture over the dough and gently press it in.
    Roll and Cut:
    Roll the dough tightly from the long side to form a log.
    Cut the log into 8-10 equal pieces.
    Place the rolls in a lightly greased baking dish, cover, and let them rise for another 30-45 minutes.
    Bake:
    Preheat your oven to 375°F.
    Bake the cinnamon rolls for 15-20 minutes, or until golden brown.
    Frosting:
    While the rolls are baking, beat together the cream cheese, 1/2 cup of butter, 1/3 cup of sugar, heavy cream, and vanilla extract u til well combined and silky smooth. Set aside until the rolls are done baking.
    Notes:
    To brulée the top, make the frosting with just 1/4 cup of sugar. Then, sprinkle 1 tablespoon of sugar on top of the cinnamon rolls and use a torch to caramelize them.
    Serve and enjoy:
    As soon as the rolls come out of the oven, spread the frosting on top and along the sides.
