Probably would go with the 3 Ogre build, +2 Gnoblars, 1 coach, and a desperate measure. Little bit of everything!

I’ve seen some leagues institute a amateur riotous rookies. 50k for 1d3+1 and I’m giving that a try this season..

I really recommend taking all pro on oger teams. I know its anectdotal but i was able to place 2nd with them in my normal league. However the more important reason is that now you get to call your team the PrOgers.

Honest question. Why wouldn't you run the house elf team as Snotlings so you have swarming?

Deathzone Sevens rules has random primaries on a player, or a random secondary on a random player. Then better players, are more likely to get "drafted" by an 11's team and leave your team. I'm not sure how to build a team, it all seems a bit random.

That seems to be just how Games Workshop rolls these days. They're not even trying to balance their games, they just throw more dice and hope it all works out in the end.
Of course, Blood Bowl was never meant to be balanced. It's very much a game you play just for the fun of it. That being said though, being at the mercy of the dice isn't always fun...
At the end of the day, if you want to be competitive in a vanilla Deathzone Sevens league, I think there are only a few teams that should be considered. You can't rely on getting any skills, so you need teams that comes with the skills in-build.
That being said though, I could be tempted to go with a team like Snotlings or Ogres, throw the random skill on a lineman after each game, then promptly fire that lineman to keep my TV down.
